BBB (best baked beans) 07/11/2008 at 07:12am User: null from null, null User Rating: I substituted navy beans for the kidney beans and since I'm not a big fan of ginger I reduced the amount to 1 tsp. One tsp. of the chili paste was enough "heat" for me and I loved the depth of flavor it added to the dish. The beans are definitely on the sweet side so it wouldn't hurt to reduce the brown sugar to suit your taste. These are by far the best baked beans I've ever had and I was sorry to see the last serving disappear. I look forward to making them again and again. I used Great Northern White beans and substituted cayenne for the chili paste. I "baked" my beans on the grill along with a pork shoulder. I took the lid off for last 30 minutes to thicken and add apple-wood smoke to them. What raves I recieved from our guests last evening!! THANKS for a great recipe! They are so good! We doubled the recipe and then put them in the crock pot for 6 1/2 hours instead of baking them and they were perfect. We followed the receipe as is and with the 2 tablespoons of Chinese Chili Paste it was perfect ... not hot at all. We even thought the sauce would make a great ribs marinade. Enjoy! After two bites of beans, my husband, who is normally lukewarm about baked beans, exclaimed, "These are WONDERFUL beans!" My mom said these were very easy to make. Changes she made: she substituted pinto beans for red beans, cut the hot chili paste down from 1 TBSP to a scant 1 TSP and precooked the bacon just a bit. Delious and we all agreed this is a keeper recipe to make again. I live on a small island in Maine where we're very serious about our beans. Though my family will probably disown me if they hear me say it, these are the best. Never again will I use a big honking hunk of salt pork or thick molasses in my beans...it's all about the bacon and maple syrup. Yum! The rating is for the flavor! Rather than soaking beans, I used 2 cans of Progresso cannelini beans drained. That saved 12 hours. The only ingredient I altered at all was the chili paste. I suppose brands vary in heat, but I know mine and 1 Tablespoon seemed like a too much. I cut that in half--it still had plenty of kick. I also didn't have 6-8 hours to let them cook, more like 3. So I put them in at 275 for the first 2 hours while I ran errands, then cranked up the oven to 350 for the last hour. Very, Very good. I will do this again.
