The Poblano dressing is really incredible. What a find. It makes a lot and keeps well in the fridge, I'd say it's even better after sitting for a few days. I make the salad using ground beef prepared with taco seasoning. Very easy meal once the dressing is made. I've also used the dressing on a traditional style Shrimp Louie salad with tomatoes, hard boiled eggs and avocado. The chile adds just the right amount of smokey background flavor.

This is the best Taco Salad I've ever had! It tastes so fresh and light! I make it at least once a month!

Another Emeril's homerun. The rosted Poblano adds that unique mexican flavor. Viva Emeril!

This salad was easy to make, fresh and good but was spicier than I thought it would be. Next time I make this, I will only use half a poblano pepper in the dressing.
