We started with this recipe and have modified it a little to better suit us. We use a 15 oz. can of Black beans, 1.25 cups of salsa (a local favorite called Firehouse Salsa), and 1 cup of corn. Then I added the beans, corn, and salsa. . mixed it up and served! Took about 3 minutes total and was great paired with the jalapeno/onion chicken from this episode! I don't care for the cilantro, so I don't know if I will use it next time. I don't like spicy food so this was good, not to spicy. My kids didn't like it and thought it was to spicy. I used beef broth instead of the water, you can also use chicken, to add some flavor to it...plain brown rice can be bland. The salsa I used was garlic lime salsa and it gave it a good twist. I modified the recipe and used brown rice, but it turned out great. I probably added too much cilantro, but it was still very good. We had a good bit left over and reheated it as a side for the island quesadillas. If you anticipate having left overs, don't add the cilantro to the whole bowl, as the fresh cilantro doesn't reheat well later. Just sprinkle it on the individual servings.
