The meat was dry but tasty and the recipe should state to divide the meat into two rolls or it won't cook in 20 minutes. Also, 2 pounds of meat is way too much for 4 people. I used a combination of lean ground beef and turkey - worked great. Fried some pitas on a high flame with a little garlic powder and butter (I'm sure olive oil would work as well) to soften and flavor them; served with a tapenade/feta/tomato stack drizzled with balsamic vinegar and olive oil and even my 16 year old daughter went crazy for this stuff! We ditched the fries - no need for them. SO SO easy to make - on top of how great it is, this took absolutely no time at all! I used ground beef because I had it on hand, but processed the hamburger, spinach, feta and spices in the food processor then formed my loaf. It was awesome and the texture was more like what I was looking for. I sliced the leftovers and froze them on a baking sheet, then put in a freezer bag for quick gyros any time I have another craving. Fantastic! DH was working in his office downstairs, and crept upstairs asking what smelled so great. I let him have a "preview" slice, and he was in heaven! (Ummm... I *did* have to explain why one of the logs was missing a few slices, due to yours truly...) The sauce was perfect, and we gobbled up the gravy. Note: The Greek-style yogurt is *very* different from regular, not just in consistancy, but also in taste. It tastes much more like sour cream than yogurt, but is incredibly rich and creamy. I could definitely see serving it, slightly sweetened, over berries for a quickie dessert. *Very* fast to prep... The entire shebang was ready in "under 30 minutes"! I prefer to make mine inside the pita bread instead of on top of the bread, so the meatloaf-type log of meat was a little difficult to stuff inside even when sliced as thin as I could manage. Might be better to just cook the meat ground up and be able to stuff the pita like a taco. All in all, the flavor was good, but I don't know if they were good enough to be worth the effort. When I cannot get Greek yogurt I strain plain yogurt like everyone else has said, but I also add 4 oz of low fat softened cream cheese. This gives it a tang and thickens like actual Greek yogurt. So, with the leftovers, we sauteed the meat and broke it up like ground beef. We opened up the pita bread, included the sauce and veggies, and completed our gyros tacos with the meat. Very tasty! Honestly, I actually prefer this recipe to what I can get at my local greek place. I followed the recipe exactly for the meat mixture. I also made two logs and baked them for 30 minutes. I had no problems with anything falling apart or being dry. They were moist and delicious. I will be making this again and again. As for the sauce, I use nonfat yogurt that I strain for an hour over cheese cloth, and then I add a little dill too. I would recommend convection roast if your oven has it. I will try it next time with half lamb and half chicken or turkey to cut down on fat. At first I thought there was a little too much spice but as my husband and I kept eating we decided it was just right. The cucumbers and the sauce mellow it all out. I used ground chuck and made little falafel size patties and just pan fried them in olive oil. Served them on tortilla bread that I recently discovered next to the regular tortillas at the market. They are much softer than pita bread. Next time I make these I might just make my own flat bread and then it would really be authentic! Of course, the premade fries helped with that. I used 1 lb of lamb with 1 lb of ground chuck and it turned out great. I would recommned getting more pitas though because it makes a lot of meat. Also, you can tweak the sauce a little, like I added some EVOO and a little less garlic. We also served it with lettuce which went great with everything. I used 3/4 cup plain nonfat yogurt and 1/4 cup regular sour cream in the sauce since I couldn't find Greek yogurt. Even my 5-year-old and 18-month-old couldn't get enough of this. Beyond delish! 03/02/2008 at 08:22pm User: Deena from College Station, TX User Rating: I saw part of the show this morning when Raechel prepared this dish and HAD to try it, but didn't see that she divided the meat into two logs--will try that next time because it took so long to cook in one. Instead of cooking the fries on a separate pan, I put them under the lamb (with the lamb on a grill pan). The juices from the lamb that dripped down made the fries OUT OF THIS WORLD. My husband and I love gyros so much that we'll be using this recipe again and again.
