Danny Boomes' short ribs were amazing!!!! They were easy to prepare(finding bone-in short ribs not so easy!!!)The only thing I would do differently is add a bit of tubed tom.paste for richness( maybe a 1/2 to teaspoon), otherwise, melt in your mouth goodness!!! We served them atop a bed of mashed baby reds w/ coarse ground Dijon as he did on the episode....I can't wait to have a dinner party and serve them. Plated on the potatoes they look so elegant!!!!

I didn't see the show, but I was looking for something special for Mother's day and came across this recipe. It was easy and really a huge hit with my family! Try it, you'll like it! (I just used bacon, not "lardoons".)

Do not use chocolate as in the TV show. The taste is overwhelming the second day. Additionally, the amount of flour is way too much for a dusting (rub)and makes the addition of paprika and cayenne pepper useless. The portions really need to be adjusted, especially for the rub. I think the recipe would be good if the chocolate pieces were not added. I also would use a cheaper cut of meat. The term beef bourguignonne means "beef stew" from the Burgundy region. Any inexpensive beef chuck or serloin will do.

I only rated this with 4 stars because I had to make adjustments out of necessity, and my novice cooking ability. Even with the adjustments and my lack of skill, I was very pleased with the outcome. First of all, beef short ribs weren't available to me, so I used western style pork ribs. Next, I don't cook with wine, so I used all beef broth, which doesn't cook down (reduce) as I'm supposing wine does. I had a lot of liquid at the end of the cooking time, so I just thickened it with a little corn starch slurry to make a gravey and served it all over rice. The ribs were sooo tender, falling off the bone, just like they should be... delicious! I can't wait until beef short ribs are available so I can try the recipe again as it was meant to be... I have no doubt it will then be a true 5 star recipe!

For those of you who were asking when to put in the chocolate,you put it in right after takeing it out of the oven,Mix it well. And serve! Wonderful Meal!!

This guys is really lacking in technique if you ask me. By totally covering the ribs is liquid you have really stewed them and not braised them. And, then he serves it right out of the pot without de-greasing - yuck. Short ribs are extremely fatty.

Loved this recipe!! What a great company dish. It's in the oven long before you guest arrive. When they do arrive their mouths will be watering from the divine smell. You do not need that much flour. I do recommend that you sprinkle a bit of the flour and stir in before putting pot in the oven. This will thicken your sauce nicely.

We enjoyed this dish, although with 4 hearty eaters we could have used more meat. One diner thought that we could have mixed the short ribs with stew meat to make it both tasty and economical. The amount of gravy would have been sufficient for more meat. We will certainly use this recipe again.




too much flour

The recipe is great and I will do it again and again. But what do I do with so much flour. So far I did not use more than a cup and it is still a lot. Doesn't it dilute the efffect of all the spices I put in ? Sincerely, Any comment is appreciated

Love your show! Found it about 2 weeks ago. And now I record it every Saturday. Short Ribs were some thing I always wanted to know how to make but was scared to try. You made it look so easy that I decided to give it a try. It was great. I made this while visiting my parents. My Dad must of said about 2 dozen times how wonderful it was. They had leftovers. And then my Mom froze the leftover sauce and used in soup! It was great. Thanks for easing my fear of short ribs!! I'm making again tomorrow night for my husband.

I have been avidly cooking from this site for about 2 years and this might be the best recipe I have tried yet. I did add about tablespoons of flour after cooking the veggies before I added the beef stock, but that was the only major change I made-oh I and I used boneless beef short ribs (all they had at the butcher last week.) DBF stopped eating to hug me mid-meal! A very easy meal.

I would definately make this again. Everyone loved it. The meat was very tender and fell off the bone. The vegetables were great and the sauce was perfect.

I made this the other day and encountered several problems. Let me start off by saying that it took forever to prep! Secondly, I found that the ribs needed to cook much longer than suggested. It took four hours of cooking for my meat to fall off the bone. I also found that the sauce was really greasy...(perhaps one needs to trim excess fat off of the ribs before cooking). The fourth problem for me was that the sauce was too watery....it looked like soup. By the time the meat was tender it was 9:30 at night. I started the whole process at 3pm! I still thought it a tasty recipe and will probably try it again. But it did not entirely live up to my expectations. Maybe I just need more kitchen experience!

This recipe was so easy and turned out really great. I cut the recipe in half (there's just two of us) and used a cheap bottle of Chianti. I didn't have any cayenne, so I used a tablespoon of Emeril's Essence seasoning. I cooked it for 2.5 hours in the oven at 350. The meat was very tender and quite flavorful. On the show, he added some chocolate, which is not in the recipe. I'd like to try that next time. I served over garlic mashed potatoes. A great alternative to beef stew.

yea, im the first one this meal was delicious and really easy to make but i did cook it for four hours and i did even add the chocolate like they did in the show. but it was still fabulous
