We found an Asian market and brought home a bunch of the chinese broccoli and added to the receipe, just lightly blanched. Even used the fish sauce which took a lot of faith! I was able to find all the ingredients at my local grocery store. I used round "rice stick" noodles instead of the flat ones and it tasted great. The soup tasted almost identical to the authentic pho I order at Vietnamese Restaurants. My husband loved it. I will definetely make this recipe again. In the end, I was impressed with myself for creating something so authentic tasting in my own kitchen. Asian cooking is always a bit intimidating for me but this recipe showed me that its not very difficult. The garnish (greens) you add at the end is spicier than I've had at most Vietnamese restaurants, but this is still well worth it. I can't get star anise at any of my normal grocery stores, so I use 1 tsp of anise seed in place of each star anise. I put the anise seed, cinnamon and ginger in cloth and tie it up so it is easy to remove later. Ever since I first made this, my husband cannot stop raving over it. I also used whole pepper corns instead of ground pepper. I also added some very thinly sliced white onion to the bowls right before serving. He took me there a few weeks ago and I could see why. On a mission to make him pho at home, I tried this recipe and was very pleased at the outcome. He was also delighted with the surprise and the flavor. I will be making this regularly. I did change just a couple things--we don't like things too spicy, so I left out the Asian chile and we used an Asian chile sauce to our own taste in our own bowl along with the plum sauce and other fixings. Instead of cilantro I found a vegetable called Ngo Gai in the Asian market, which was much more similar (or the same thing) as what they serve in the restaurant he goes to. Also, I must admit I omitted the fish sauce, as the sauce I bought tasted terrible. All in all very tasty. I used half as much as the recipe recommended, and it still was a little overwhelming because of the otherwise delicate seasoning. I would make it again, though. With all the positive reviews and I happened to have all the ingredients on hand I thought great, I can make it at home but sadly it was just not good.I'd rather buy it.
