I used colossal shrimp which tasted just like lobster. Added some clams too. I did not add the roasted peppers as the large cut up fresh red pepper was enough. If I made this again, I would use fresh OR jarred peppers, not both. I had to use 2 New Mexico and 1 guajillo chiles b/c I that's what I had. I felt this dish needed a bit more of a spicy 'kick' even doing this, so I would suggest using guajillo or even pasilla chiles if you like a spicier taste and forget the ancho which is very mild.

I added more seafood than just the lobster including shrimp, calamari, and mussells. I substituted ancho chili powder for the chile and it came out fine.
