While visiting we tried koshari/koushry from the mall food court - as it is considered Egyptian "fast food." It had many more layers of flavor than this recipe. It addition to the rice, lentils, and fried onions, it had fried short noodles mixed in with the rice for crunch, garbonzo beans, flavorful tomato sauce, and then was topped with lemon juice - making it more of a meal than a side dish. What would have made it better was to cook the onions first and then cook the lentils with some of the cooked onions to get a good flavour with it. The way the recipe is written is like ordering a chese burger and getting only the meat between 2 pieces of bread. Where is the cheese, where are the condiments? This dish is so full of flavor because of the different layers of additives. There is the rice and lentils, then there is the onions then the chick peas, the hot sauce, the tomatoe sauce and the pasta. Each layer adds another dimension to the dish.
