I saw that this recipe would be rather plain and bland. I rescued it and turned it into a 5 star. I first added a chopped carmerized onion to the potatos. I followed the recipe as was and dropped the balls into boiling water till they floated. Then I sauteed them in butter till taking color.

Didn't stay together...

The receipe sounded easy enough. It was until dropping balls of the potato mixture into boiling water. When draining through a strainer I had 4 small balls out of 6 medium potatoes. I'm quite disappointed!

Good idea, wrong ratio

Good basic recipe; however, I needed about 4 cups of flour. My potatoes were probably a little larger than the "medium" this author used, but still, the percentage of flour/potato was way off. As is, I could not form balls from the mixture until a much larger quantity of flour was added.

Wonderful!

This is good eats. It goes perfectly with Chef Flay's recipe for Sauerbraten. When you plate dishes for your family and they eat in total silence, you *know* it's good!

I used red potatoes, and since I had alot to do the day of the dinner, I made the potato mixture up the day before, and put it in the icebox. I thought it might harden, like cookie dough. When I put the potato dumplings in the water, they stayed together for a while, then disintegrated. Should I have used another potato besides reds? Should I have not put the mixture in the icebox overnight?

Fell Apart

When I finished mixing the ingredients, the dough seemed rather soft. Even though I thought I would make them into balls, there was no way that could do that. I dropped them into boiling water, and they completely disintegrated. When I added more flour (A LOT more flour), they stayed together a little better, but even after cooking for 20 minutes, they were doughy. I was disappointed--had made the Sauerbraten and the dumplings would have been terrific with it.

This recipe worked very well; I made half the recipe and the dumplings turned out light and delicious. After draining the dumplings I placed them in a buttered dish and grated sharp cheddar cheese over them. The dish went in the oven for 10 minutes until the cheese melted. These are a great side dish to compliment any entree. Quick and easy to make.
