The only thing I can come up with, is you need to cook it exactly the way it states. I thought this rice was perfect and would go with any dish. It had a touch of the tropics. Another person said it tasted like a rice pudding. That sounds like they used sweetened condensed coconut milk instead of unsweetened like it states. All I have to say, super simple super yummy!!!!! This reciepe took alot more than 2/3 cup of water. The coconut milk left a bad aftertaste. This was my first time eating mango and I didn't care for it either. I was able to reheat the leftovers in the microwave the next day without getting that usual leftover dry rice texture. I used jasmin rice and added about a teaspoon of sugar and unsweetened coconut flakes to the rice with the mango. Do not simmer the rice, continue cooking on the same heat level for about 10 min. more than the recipe calls for , until you see that all the liquid has been absorbed. Not mush at all. Great mango/coconut taste. Its a keeper for me, my husband asked for seconds on this rice. We love rice, mango and coconut but this recipe tastes like an undercooked rice pudding. I added more water and kept cooking it slowly as it states but it never cooked through. Reminded me of vanilla soy milk taste too. Never again and what a waste of a good mango!!! Sooooo bad we just tasted it and threw all of the rest away!!! It was simple to make and the mango was a nice summery addition. I paired it with chicken but will try the fish that was featured on the same episode next time. I needed to use more water to get the rice to finish cooking, though. I have added this one to my collection! I was expecting it to taste mostly like coconut, however the coconut flavor was very delicate. The mango was a perfect addition. Will be making this quite often this summer to go along with grilled fish or Jamaican jerk chicken. I think the coconut milk may bit over the top. But don't be shy about using lots of mango as it's quite tasty in the rice. I used frozen mango (thawed it first). I was asked not to put fruit in the vegetables in the future...but I liked it. The mango does become a bit acidic so might not be for a acid-sensitive tummy. |
