I noticed one thing though... somebody else mentioned that they followed the recipe to a T, EXCEPT substituting TABLE salt for KOSHER salt. I did the same! Maybe this is the problem: table salt granules are much finer with less air between them, thus 1 tbsp. table salt > 1 tbsp. kosher. More salt = more retention of moisture! To those who run into problems with mushiness/too moist, tell us if you used kosher salt, please! We didn't have buttermilk so I used a mixture of milk and yoghurt instead, and I also added a splash of vanilla extract. People rating with one star just aren't making them correctly. Make sure you use two cups of the mix, buttermilk (otherwise there's no acid to react with the baking soda) and don't overmix. Thanks for another sucess Alton! (Yes, I could figure out how to adapt another one, but am too lazy, and since pancakes aren't my favorite, not really interested in experimenting to find the "perfect" one...). Maybe some of the "gooey center" issue comes from the fruit (if you're using it). Since it just sort of rests on top, the second batter side doesn't get full direct contact with the griddle. (It also becomes quite moist when cooked.) You might try the muffin technique of adding berries, etc.: coat them in flour first (so they "stick" and don't sink), and add them to the batter beforehand. Check both the baking soda and powder for expiration, of course. Consider storing them in airtight containers as well. The one thing that really surprised me is that Alton didn't provide the *weight* of the flour!!! (He's usually such a stickler for this!) That might also account for the varied results. Maybe using the food processor to *really* mix the dry stuff together and distribute the leavening would help, as well... I've always relied on the box type and these are better, "taste homemade" as my husband said. I skipped all the egg separating and just mixed all the wet and dry separately and then combined. I also cheated and poured the dry over the wet. I found the batter to be a bit thick so I thinned it with a little milk and the cakes were fluffy and yummy. I think this is by far the best recipe I've ever used for pancakes. I recommend the vinegar/nonfat milk mixture (1/8 cup white vinegar + 1 7/8 cup nonfat milk) as a substitute for buttermilk, if you don't have any. There's no noticeable difference. These pancakes, if prepared properly, are the thickest, most fluffy pancakes I have ever had. My kids love to add chocolate chips, I think blueberries are the best and my wife loves them 'as is'. AB is right on about over mixing. A s-l-o-w 10 count is ALL you need! I have also pre-mixed the wet and bottled for travel on vacation and to Grandma's house. When ready, simply pour the pre-mixed wet in to the dry and your set. My batter also turns out much thicker then AB's. Guess I'll experiment a little next time. The blueberries burned my griddle. I'd recommend heating them in the microwave instead; just-until bright purple. Then poor on to the finished product as-if a sauce. Very tasty! For the first time in 28 years of marriage I finally made pancakes that were suitable to eat and not play frisbee with. I have tried every which recipe I could find and have had no luck. These sound a little time consuming when you consider the box mix you just add water and cook but WOW the difference is worlds's apart in taste. Take the time and follow the directions. I took this recipe on vacation to Arkansas and my husband and brother in law ( who hates pancakes) could not get enough. I fixed 2 x the recipe when making the mix and they ate all of the mix in 5 days for every breakfast they had to have pancakes. Made me so happy, they crowned me the pancake master thanks to Alton and this recipe, I also watched the show 2 times to make sure I was doing it right. I too was an overbeater but no longer. There was no baking soda/powder in the house. **For the liquid** Instead of buttermilk I used 1 tablespoon (.5 oz) of vinegar (you can use lemon juice) and then filled up the measuring cup to read 1 c (add 7.5 oz milk) of regular milk. I also added 1/2 teaspoon of REAL vanilla extract and used margarine instead of butter. I know, I know, sacrilege, but that is all I had on hand. We tried this recipe because we found it to be pretty simple and we love this show. There are some people who don't think the pancakes come out good, but its probably just some simple little mistake on their part. I had made these with my brother and they came out almost perfectly. The only problem was that I didnt mix the batter completely at the bottom. Other than my green shirt turning white because of shaking the mix wrong, there wasn't even a mess that couldnt be cleaned up with one paper towel. The pancakes tasted amazing and my entire family loved them. They were fluffy and rich, and they tasted even better knowing I made them. Being 17, I am not always extremely patient, but I do love to cook. The time it takes may not seem worth it when you first try the recipe, but it becomes a lot easier once you know what you're doing. I would recommend this recipe to anyone who likes (or loves) pancakes. This was my first Alton Brown recipe I have tested, and I am completely positive that I will continue to try his recipes after this one. This recipe beats mine, hands-down (and, believe me, mine were great), but the key is to check your baking powder. I'm sure that the problem with those 1-star reviews was dead baking powder. Pancakes won't rise without leavening, and baking powder has a very short life. If you don't remember when you bought it, toss it and buy more. Also remember to mix just until barely combined. If the pancakes are too thick, just thin with a little buttermilk. I promise, it's truly worth the little bit of effort for delicious pancakes whenever you have the craving. I would recommend using actual buttermilk if at all possible though, since nothing else tastes like buttermilk (although I've used a 1:3 mixture of milk and plain yogurt with satisfactory results). If you haven't tried them yet, they cook up very fluffy and airy, mine come out about the consistency of a choux dough (think creme puffs). Much lighter in texture than the "buttermilk" mixes that have been foisted upon us in the past! PS, I concur that the "check the expiration date" on the recipe page is for the baking POWDER and not the SODA. If you're not sure, drop some of your baking powder into some hot water, it should fizz if it's still good. I recommend aluminum-free BP, if only because the aluminum can give a rancid taste every once in a while, and some hippies say aluminum causes Alzheimer's. They are the thickest, fluffiest pancakes you will eat...plus you have the added bonus of knowing that you made them yourself! My husband is the breakfast hero in our family thanks to these. Extended family members show up hours early on holidays so they get to eat these for breakfast before the "big meal" of the day. Also, leftoevers freeze well and reheat easily in the toaster oven for weekday breakfasts. As always, AB is Da man!
