These Beans are great! And I'm not a big fan of Beans. It's been five hours and no Tummy Music so far (lol). The consensus is correct though; Beans are done in 6 hours! And quite tender at that point. Another point of Contention...when soaking the beans overnight, if you only put enough water in the container to cover the beans, you won't have any fluid left by morning. My water level was about an inch over the beans, and I had to add a full cup of water, early in the morning. If they are not fully hydrated before cooking, then they will suck up the broth and end up dry. And yes, they are a bit on the Hot side when made per the recipe (and I love'em), but my wife is a wimp (she orders "mild sauce" at the local Mexican cafe). So, if you don't like it on the Hot Side, just use one Jalape?o and a pinch of cayenne. But if you want a mouth full of flavor...stick the Master's Recipe! Love ya man. I have varies the peppers (1, 2, 3, jalape?os, chipotle, whatever I have around) and the type of sweetener (honey, sugar, molasses, and agave nectar). All attempts have been fabulous. This stuff is awesome. I have a special love for baked beans over toast (it's a UK thing) and it's fantastic for this too. The only thing I would mention is that if your beans come out gross and dry, do not give up. Add more water in the dutch oven next time. I don't know why mine requires more then everyone else's apparently does, but it does. All the same, FABULOUS! The jalepeno adds a nice dimension and depth of flavor. Don't leave it out, it does NOT make the dish hot! Just don't use the seeds or pith (white membrane inside the pepper). I make these every 4th of July. I think only 2/3 of the pot actually makes it to the table! It does have a bit of a kick to with, with the jalapenos and cayenne pepper, but not overwelming. If you don't like spicy foods, I'm sure you could just omit that part. I think the only thing I will do differently next time is drain some of the bacon fat before adding the rest of the ingredients. When done baking there was a little extra bacon fat on top, which I just spooned off before serving. Mine were done perfectly after 6 hours baking time. Also, I haven't tasted the leftovers yet today, but I'm betting the spicy flavors mellow out a bit after sitting in the fridge a day. I've made them many times now and all Alton's times and measurements are spot-on. I've found soaking for 8 hours and cooking for 6 gives the best texture to the beans. Going all the way to 8 makes them a little too mushy for my tastes. I do seed and remove the white from the inside of the jalape?os but a very fine dice restores just the right amount of heat to the dish. (The heat seems a little more mellow the day after cooking.) As far as the jalapenos, I used the seeds from only one of them and for my tastes the heat was just right. Also, I absent-mindedly left myself without a can of tomato paste in the pantry, so I used ketchup in its place, and everything turned out just fine. Even with some extra water on top, the beans were bone dry in the morning. It made the final product a little too al dente, but that was easily overlooked because they tasted so fantastic! I'll just make sure to submerge them in a couple inches of water next time to make sure they get a good soak. Also, I think the serving size is off. As a side dish, this feeds twelve, not six! AB, you have done it again. Easy prep, and GREAT results. P.S. We served the beans with Molasses Bread. The biggest thing is probably the amount of fat in the recipe. I'm not a big "cut the fat" guy, but it's excessive even for me. Next time, I'll probably try either low-fat bacon or Alton's suggestion of 1/4 cup olive oil. However, the flavor is great. The heat is definitely there, but it's good for something like this, or I'd eat the whole batch really quick. Definitely a repeat recipe! I was very glad I did. My mom commented to me that once she had gone to a lot of effort with a recipe for baked beans and all it got her were beans that tasted like they came from a can. These were easy and delicious. Two comments: one, it's a good idea to spoon off some of the bacon fat. There's a LOT of it and I don't think it really adds much to the beans (and I LOVE bacon). Two, slow cooking, even with a double recipe, took only six hours in the oven. I'd make it again, it is great for lunch on a rainy afternoon. Or a sunny one... The one thing I need to do is to reduce the cayenne pepper by half to tame them down some, and eliminate the jalapenos; I'm the fire-eater in the family, and even I find the entire measure of cayenne too strong. As for the jalapenos, YMMV. But I look for something with bite, without getting painful. I would encourage you to watch the liquid level in your Dutch oven carefully. At least in the oven in my old house, the beans had a tendence to cook dry. YOMV (your oven may vary), especially if it's a digital controlled unit. Alton is 100% correct on cooking in a cast iron crock. I made the recipe twice in a standard stock pot before I broke down and bought a cast iron crock. Both times while still very flavorful, the beans were mushy. After cooking in the cast iron bean pot, the beans had excellent texture. I only used the seeds from one of the jalepenos, and there was still plenty of kick in the beans. Only thing that bothers me is the use of 1lb of bacon. I appreciate the tip from the reviewer who used lean bacon and also drained the fat. Next time I make it I'll give it a try, or substitute turkey bacon. I cut the salt in half and used 12oz. oscar meyer center cut 30% less fat bacon, and I drained it before adding the other stuff. It was excellent!! So far it's the only thing I use my new cast iron dutch oven for--but well worth it. If you're watching points, one-tenth of the recepie the way I did it is 7 points. Enjoy!
