Wonderful make-ahead dessert

I had to add just a bit of sugar to the granita before I froze it, and then it came out perfectly. It tastes a lot like the "granita con panna" you get in Italy, without the hassle of making fresh whipped cream. I personally prefer either blending this before serving, or blending it a few hours earlier and hand mixing it once an hour until serving. Otherwise, I find the ice crystals unpleasant.

The mint was just a hair overpowering, but made it taste really fresh. The marscapone cheese was the key to the recipe. It made it melty and smooth! I'm 13 and it wasn't too hard to make, but not like PB and J easy. And the texture wasn't the same as the picture. Overall really good and a great summer snack.

This was so incredibly easy to make and we loved it. I did add some sugar to the finely chopped strawberries for the topping. I made this in April before the home grown strawberries were in season and they needed a little sweetening. I really liked the mint in the simple syrup, very refreshing! Will be making again very soon!

I havent actually made this dish yet, just thought i would let people know that on the show she did not add the extra sugar to the strawberrys when she blended them up. It might make them extremely sweet, but i guess you can add it if the strawberrys are not as sweet. Hope that helps.

As soon as I saw this I knew I wanted to make it for that evening. I didn't want to go to the store, so I made a few adjustments. I made the granita with frozen strawberries. Let them defrost 2 hours. I used cream cheese and the dessert was still wonderful for me (Giada always prefers Mascarpone, but in many instances, cream cheese works just fine). I didn't have fresh mint, so I used half a teaspoon of mint extract. My kids absolutely loved it. Topped with fresh strawberries and whipped cream and served in a waffle bowl.

This sounded so fresh and spring-like that I made it for the family gathering (a dressed-up version of pot-luck that we do for holidays, alternating homes). This was good but I'm not sure how to "spice" it up a bit. Too bland for my taste buds. Nice change of pace though. Melts very quickly at the table. Best to eat it right away or it gets soupy.
