Don't boil the dumplings first. Just brown a single layer of them in some oil in a wok or large skillet, then add 1/4-1/2 cup water (depending on if you're using a wok or skillet), cover and allow to steam until water evaporates. Repeat with additional batches if necessary. I like the texture of the wonton wrappers better if they're cooked this way.
