I've only had polenta once and it was fried so was skeptical about how it would taste with the stew. Amazing combination, I couldn't imagine eating the stew without it. Couldn't find cubanelle peppers, so substituted poblanos -- no problem. The amount of rosemary called for in the polenta seemed crazy, so I used half that much. It was delicious, but I would not have wanted it to have any more rosemary than I put in there. We're both vegetarian, so it was great to see Rachael make something hearty, healthy and veggie. For the stew, I prepped everything in advance, then added it to the pot all at once when I was ready. I waited to make the polenta until he came over, but had the rosemary chopped and the cheese shredded in advance. I'd never made polenta before, but it couldn't have been easier. And the pairing of the polenta with the stew added a nice level of flavor and cooled off the stew's spiciness. I liked it a lot, and my boyfriend said he liked it too but could have done without it and gone with some nice crusty bread instead. But he's picky. I couldn't find porcinis, so I ended up going with dried portobellos, which cost me about $12 for 1 ounce. Next time I might skip the mushrooms altogether if I can't find something affordable. I should also mention that I'm on WeightWatchers, and the stew is only about 2 points per serving (depending on your serving size). The polenta is 3 points. After one bowlful, I was stuffed. This is one hearty, healthy meal. (Not to mention delicious! And I have plenty of leftovers to invite some friends over.) I added each ingredient to the pot as I chopped it, as Rachel advised, making this recipe truly quick and easy. This is definitely a keeper recipe. |
