I'm disappointed with this one big time! I doubled up on the garlic but still found this pasta had very little taste. I had to add parmesan to get make it a bit better. I will not be making this one again.

I made this recipe and thought it was super easy to make and it's great for a summer night when you might want pasta but don't want a heavy sauce with it. I could swear on the show there were red pepper flakes involved. If not, they'd be good in this for some kick. I added an extra garlic clove, because let's face it-You can never have too much! Also, I recommend dicing the mozzarella REALLY small, because the bits are hard to eat if not. Great recipe.

Fresh mozzarella a must!

Great summer pasta dish. Be sure to add lots of fresh basil. Also, splurge and buy really fresh buffalo mozzarella. Also, you may want to cut down on the 1 tsp. of salt (especially if you salt the pasta water). I found it was just a little too salty.

Excellent

This was such a great recipe--so simple and light, but completely satisfying. You have to get the cheese into it (I used bocatini--little balls of fresh mozzarella) really quickly, and add the pasta water while it's really hot (as well as mixing it all up in the hot pasta pot) in order to get the cheese to melt properly, and stirring it well helps too. I found that this was perfectly seasoned for a fresh tomato sauce--if the water is salted well enough, it's more than enough to season the whole dish. Fresh, light and yes, exceptionally good when cold the next day. This is my "summer pasta" from here on out, for sure.

Fantastic Flavor

This was so easy to make. The flavors are fantastic. I just need to find the right mozzarella because it didn't melt the way I expected, but overall, wonderful! What a great meal to make in a hurry and fun to make with kids.

This looked like it might be dry and sauceless, but I was pleasantly surprised at how much sauce the tomatoes and pasta water made. The spirals really hold the sauce so each bite is flavorfull and juicy. My 4 boys (and hubby) LOVED it and put it at the top of their favorite dinner list. Easy easy easy to make! It makes a TON and feeds 6 hearty eaters! I did change the chunk mozarella to shredded - it melted easier and I added a few handfuls of grated Reggiano Parmesan for extra zing. I highly recommend it with a good salad and some hot garlic bread. Way to go Giada! It's a hit in my house and one I'll fix often.

A weak four stars

Although we were all pleased with this recipe, it was a little bland and we felt it could have been a more solid 4 stars or even five with a few simple adjustments. It needed a higher sauce to pasta ratio, as well as some additional seasoning. I added a skosh of Italian seasoning and two extra cloves of garlic, and it was still bland (thought 4 cloves of garlic was plenty). I think it would have been tastier with regular (aged) mozzarella cheese as opposed to fresh. Also, we used parsley instead of basil because we had it left over.

great! with garlic lime chicken

I have been making a similar version dish of this dish for years. Instead of fusili I use bucatini, (long macaroni) which holds up against the mozarella better than I would imagine the fusili does. I don't mash up the tomatoes (they'll relinquish enough of their moisture to make a sauce but still look pretty). I use crushed red pepper instead of black, more garlic and instead of mixing the pasta and sauce in a separate bowl I dump the pasta into the hot skillet with the sauce, quickly toss and add the mozz and basil and toss again, otherwise I find that the pasta cools off too quickly and the cheese may not heat all the way through. Additionally, I find that if I just give the pasta quick drain and get it right into the sauce it retains enough liquid that I don't have to add any additional pasta water.

Loved It!!!

I have made this twice in the last week and we absolutely love it....better than you could get in most restaurants. I used bowtie pasta and it makes it such a pretty dish. Did not have to use pasta water either time but did increase the tomato to pasta ratio. This will be eaten frequently in our house.

Bursting with Flavor

Simple, elegant and very tasty! I think commercial mozzarella would work well too, perhaps yielding softer bites of cheese. The fresh mozzarella I used melted a little too much. Will definitely make Fusilli alla Caprese again.

Great taste, but....

This was a wonderfully simple pasta dish to make. I added a little extra cheese, because you can never have to much cheese. The only thing I will do different next time is to use stewed tomatoes next time instead of fresh. When you smash the cooked tomatoes, the skins come loose, and for my kids, the tomato skin is a choking hazard. Otherwise, great dish Giada! Thanks =)

Deceptively delicious!

I made this last night for a quick dinner (just myself) and made the entire recipe. I could not stop eating it and ate half of it. My son is in night school and when he came home he polished off the rest. Deceptively delicious ... really tough to put the fork down! Just be careful when you are squishing the tomatoes, I had tomato juice squirting everywhere. I'll work on that next time I make this. Terrific!

I made this recipe tonight and it was so fresh. The ingredients made it very light and refreshing (not heavy and weighed down). I think to make it more health" conscious next time Ill make it with whole wheat pasta. I also added a 1/2 cup white wine with the tomatoes in the beginning to mix the flavors and did not add the pasta water. Added a nice little flavor.

This recipe looks sooo good, however the flavors of pasta, fresh mozz & tomatoes make this recipe absolutely tastelss. I was highly disappointed in Giada. It needs parm cheese or other flavors the the basil to bring out the flavors. The mozz also gummed up.

I really have enjoyed this recipe. I made it the other night a slightly different way. I did not have mozzerella or basil so I substituted those for parmesan and parsley. It was very, very good!! I tried out the recipe the next night with the mozzerella and basil. I did like it but I felt the other recipe had so much more flavor. It seemed the parmesan thickens up the pasta and gives it much more taste. If I had to chose one I would definitely chose the parmesan pasta recipe. I did still enjoy the other recipe!! Delicious!!

This is a great recipe -- it took twenty minutes to prepare, including chopping and cooking time. The amount of tomatoes in the recipe leaves the pasta a bit barer than i would like, so i would probably add a few more tomatoes, basil, and cheese next time i make this. Wonderful overall.
