The skins of the two potatoes never got crispy at 350 degrees and nor did they ever get anywhere near done in one hour.

This was absolutely the best baked potato I've ever eaten. Great for chili and other toppings or even better by itself with butter and/or sour cream. Tremendous!!!

This is by far the best baked potato I've eaten, and it was so simple! I was a little embarrassed when initially searching on how to bake a potato- I wasn't certain about the oven temp. The skin was so crispy and good along with the moist, creamy potato. This is coming from someone that never eats the skin! Thanks you! I've been telling everyone about this recipe!

350 for 45 minutes will not cook a baked potato. Either this recipe is missing some context or it's just wrong. Tried it twice and then experimented and found 400' at an hour or more was the best. Your milage can vary by weight of potato.

tonight, my family and another family polished off 9 potatoes, skins and all. perfect. i did mine at 375 and they were done in about 50 minutes, but i turned it up to 425 for about 5-6 minutes to try and crisp the skins a bit. i used small potatoes (the ones in the bag that you buy for a couple bucks) so i have no idea what type they were, but they were delicious. i used coarse hawaiian salt and although they looked funny with all the salt on the outside, it added a nice crunch and great flavor. i'll never waste foil again. ps...i have a new viking oven that is super hot and the time alton recommended was just right, i left mine in longer because i did so many potatoes.

This is by far the best, tastiest way to bake potatoes! From the first time trying this method of baking potatoes, neither I nor my family will use the traditional wrap-in-foil method again.

Like anything AB does could be less than 5 stars. I appreciate the fact that Alton lists the type of potato, and the reference to Mr. Potato Head helps me remember what I'm looking for!

I never thought I would be reading a recipe for baked potatoe, but Alton Brown has never steared me wrong before, what did I have to loose. The potatoes were baked to perfection, I used Idao potatoes, I am guessing with a different sort of potatoe I would have acheived the crispy skin I was looking for. Very yummy, even the next day warmed up on the BBQ

I was looking for a recipe for baked potato, and found this one. I don't normally eat baked potato, but this recipe sure changed my taste for potatos. I used Olive oil to coat the potatos, and sprinkled Hawaiian salt. It was great with the beef short ribs I served them with!

These potatoes come out wonderfully. I am a fan of eating the entire potato and this is the best method for cooking. The foil wrapped ones are fine if you don't eat the skin.

Baked the potato the first time, and wasn't impressed. Good, not amazing, and for an hour of baking, I'd expect better. Microwaved it for four minutes and baked until the skin was taught and crispy. Cracked it open and seasoned. Now that is a match made in heaven. Perfect for my hectic lifestyle.

This baked potato was absolutely perfect! The skin was crisp and seasoned and the inside was incredible! I felt like I was eating a restaurant but I was actually in my own home. I would highly recommend this method for baking potatoes. You'll never go back to the old foil method.

This makes a very flakey baked potato. Of course, potatos vary greatly in variety and size, so you may need to modify the cooking time. Mine took an hour and a half. You can tell they're done by using a hotpad and giving them a squeeze. You'll be able to tell it's done by that soft feel.

I followed this recipe to a T. The average size of the potatoes I baked was 7 ounces. (I baked five at one time.) At 350 for exactly 1 hour, the skin was crispy, the flesh was soft and mealy. Ahhh, perfection. Those who had trouble getting their potatoes completely baked in that amount of time at that temp might want to check their oven calibration.

I'll never bake potatoes another way again! These are the best. Roasting right on the oven rack leaves a slight mess, but if you wipe it up immediately, you're all set.

In what universe does a baked potato bake in 1 hour?
04/18/2006 at 10:21pm
User: Anonymous    User Rating:
Ok, I tried this recipe twice already, and after 1 hour at 350F my potato was NOWHERE NEAR done! It needed at least another half an hour, possibly even another full hour - I don't know, got too hungry to wait and popped it in the microwave. And the second time around I even tried baking it for 1 hour at 400F - no luck either. I wasn't using particularly large potatoes, just your regular russett potato. I'm extremely disappointed with this recipe, as it is totally inaccurate, but while I looked for it to rate it, I've seen that most recipes say that a baked potato takes between 45 minutes and an hour. I don't know what universe that is true in, but definitely not in mine. Perhaps a small white (young, virtually skinless potato) would get cooked in that amount of time, but not a russett potato, I'm sorry, ain't happening in my oven (and it's a pretty good oven!)

Perfect!

i cooked a nice size potato for 1 hour and 30 minutes at 350 degrees as directed. After that long, it was not even close to being cooked. I can't imagine how long it would have taken. I gave up. Cooking potatoes at 400 degrees works for me but not this!

Used some really nice gray sea salt from Napa Style...what a nice way to highlight the flavor! Best spuds I ever made. So simple. So easy and I will never make them any other way. Thanks!
