This roast carrot and avocado salad is fantastic! It is almost a meal in itself. Using the rainbow carrots makes it beautiful as well as delicous. I added a little smoked paprika to the dressing and it added really good. I took it to a party and everyone asked for the recipe.

What an amazing dish! This has it all, flavor, texture, plating. Can't wait to get back to the Farmers' Market for avocados, carrots and micro greens. Will make this dish over & over again.

I'm glad to see that ppl are actually making this recipe (& reviewing it) rather than using this space to rant about the copyright policies of Jamie's producers. I have made this twice so far, the 1st time following the recipe faithfully. The consensus was that the avocado's delicate flavor was overwhelmed by the sweetness of the carrots. The 2nd time I made this, I turned it into a side dish by subbing yellow potatoes for the avocado (I parboiled them with the carrot, then roasted them with the other ingredients). It was wonderful, and variations of this theme will be a part of my arsenal from here on out. Thanks Jamie! You rock! :)

Wonderful recipe and easily adapted to fit the chef's tastes. My version featured delicately spicy onion and radish sprouts mixed in with the greens and I cut the carrots into large chunks. This dish was the talk of the evening! I plan to keep it a prominent part of my repertoire!

Although I substituted many ingredients, it still turned out very well. The combination was unexpected and quite delightful. Thanks again, Jaime. Unlike one of the other reviewers here (see under the title "Producers - Heads Up"), I watch the show and am often so inspired that I try the recipes within a week or so. If the Food Network has some limitations concerning posting the recipes, then so what? I think it's generous of them to post the recipes online at all and I find the website to be a valuable educational tool! Thanks!

Please keep your personal comments to yourselves. If you have something constructive to add regarding the recipes, then have at it. Otherwise, keep the nastiness and negativity out of this.

Jamie's program is my absolute favorite cooking show. He conveys such passion for food, which is so inspiring. I don't feel like I'm watching a product infomercial. I can't wait to try this recipe

Great mix of flavors. The orange and lemon give a freshness and spark that make winter veggies perk right up. Takes a bit of time prep with boiling carrot before roasting but well worth the effor.

Honestly, get over yourself....how do you know that people don't watch his show or rate his recipes when clearly there are reviews on some of his recipes already? Its a new show, and just because YOU don't watch the show doesn't mean that nobody watches it. Seriously, who died made you the spokesperson of the "supposed non-viewers" of this show? If you're going to hate then speak for yourself and keep your ignorance to yourself. THANK YOU

Don't suspect it will be any inconvenience to the majority of your viewing audience. Have you told Jamie's "producers" that nobody likes/watches the show, and nobody either tries nor rates most all of his recipes?
