First of all, I had purchased yeast in bulk at the healthfood store and had to google how much yeast is in a packet -- I went on faith that the answer I found was accurate (2.25 t./ per packet or just about a tablespoon). And I also wondered why in the dough part of the recipe the butter called for 1/2 cup melted (which I think is a half a stick) and the filling part of the recipe called for a stick of butter melted. To me, they are the same thing but the different phrasing in the recipe planted that seed of doubt. maybe another reviewer can help this amateur chef or overly analytical recipe reader. The last stumbling block was whether the dough was rolled 'short end in' or 'long end in'. I gambled with rolling the long end in and i think it should have been the other way, making much wider, flatter rolls than what i had. But i didn't throw the baby out with the bath water. My kids inhaled these and i know that I can either cut more (like a dozen or so) and make them cook more evenly next time or roll them the other way. The only thing I added was a teaspoon of sugar to the yeast. I did take note frm another reviewer & added 1 tsp. of sugar to my yeast mixture which helped the yeast bloom. my dough doubled in size w/no problem at all. I doubled the ammt. of pecans in place of the raisins & melted a container of vanilla frosting in the microwave in place of the powdered sugar recipe for the glaze. I was very happy with the end result, but I'm so thank full for the other reviews. The only way I could get the dough to rise was putting hot water under the bowl. (Suggested in another review) I also left out the raisins and added more brown sugar. Everyone should make this for your family, friends, and coworkers. I went to the Food Network site and found Nana's Cinnamon Rolls. I have made several different versions and, so far, have had RAVE reviews. The bread is light and buttery, not heavy and chewy like many others I've tried. My kids, being my guinea pigs, have said they are 'the bomb'...which I've heard in todays 'lingo' means....THE BEST! I put my dough mixture on a wire rack over a pan of very hot water and covered with a towel for one hour to rise and also did the same when they were in the pan before cooking (30 minutes) and they turned out beautiful! I also used less than half a stick of butter for the filling. Huge hit with my family. Will definitely make again. However, I have always had good results when following a specific recipe. I love cinnamon rolls, but have never actually took the time to make them. After watching the Neely's prepare these cinnamon rolls on their show and reading the reviews posted here, I challenged myself to give them a try. I had a huge success with these rolls and was extremely pleased with the final results. It should be noted that the correct amount of yeast is, "two" 1/4 oz packages of dry yeast. Plus, I used the tip (from a reviewer) to add 1 teaspoon of sugar in the dry yeast mixture. I had to make an adjustment by adding a little more flour in my dough--it was a little too sticky. I was able to get 10 cinnamon rolls and used all the dough, including the ends. After slicing the rolls and placing them in the baking pan, don't forget to allow them to rise until dough is doubled, 30 minutes or longer. Also, I figured the recommended 20-25 minutes baking time seemed too long for my oven. My cinnamon rolls were golden brown in just 15 minutes. I will definitely keep using this cinnamon roll recipe--no more refrigerator cinnamon rolls for me. Thanks Pat and Gina for sharing another one of your family's treasured recipes! It has to be the right temperature or it won't rise. I use a therometer that is for meat and yeast. If the yeast is good it will make a header and I always put a tsp. sugar in mine. A - they didn't rise & my yeast was fine & think the amount was off. Could kick myself for not reading the reviews 1st - because it is off. They were a bit on the tough side. B. Not the nice fluffy type that were shown on TV. I did try another recipe from the internet Cinnamon Rolls in less than 2 hours & those DID work, nice & fluffy. Live & learn I guess. After waiting a long time, I made the filling and rolled out the cinnamon rolls and they sat in the tray for over an hour waiting for them to double in size... but that didn't happen. Likely they just meant 2 packages of yeast, NOT 4 ounces. If your dough is not rising there are 3 possibilities: 1.Your yeast was dead when you started. Did it bubble up in the water? 2. Water was too hot and yeast was killed. 3. Location for dough rising too hot or too cold. Yeast is very particular about temperatures. Too cold and it will just sit, too hot and it will be dead in a flash. 100-110 Fahrenheit makes it very happy! Hope this info is helpful. I used 2 packages (1/4 oz each) of Fleishman's Rapid Rise....and I too am still waiting for the dough to rise and it has been 45 minutes. I would probably add some sugar to the yeast mixture as I typically do. I also substituted 1 C plus 2 T cake flour for one of the cups of flour to hopefully make a lighter consistency....We'll see. I don't even think you can disolve 8 oz of yeast in 1/2 cup of water. Used 2 (3/4 oz.) packages and am now waiting for dough to rise. Has been 45 min. and dough is flat as it was when first put in.
