Be brave and experiment with different ingredients. My favorite is using chili oil instead of olive oil and adding garlic powder and fresh ground black pepper. We use the staples with no problem at all. Also, we just use the 'Popcorn' setting on our microwave. It may not pop as many kernels, but there's never a problem with overcooking. Using Alton's method, we had to be very careful not to overcook the popcorn. It works, you just have to pay attention while cooking. Great recipe! This recipe is a summons to excite the masses- don't put up with packaged food junk anymore. No excuses. However, the same sort of instructions really do apply- no popping for two seconds- yank that sucker. And for the obsessively complusive of you out there: you can save your unpopped kernals at the bottom of the bag, and repop them... just in case you were curious (don't ask, it was just one of those days). P.S.: I can attest that my microwave has not been harmed with the introduction of staples to its diet. Use peanut oil, canola, soybean, anything but the EVOO, it has too low a smoking point. And two, watch the bag in the micro. I didn't have a stapler. I just folded the bag over twice and it stayed sealed while popping. I like to pop without the oil or salt but I add it after popping. My sister is a micro corn addict and she loves this. It's great because you know what you add to it, and can control how much oil, salt, or other seasoning in in the corn. I must say that extra-virgin olive oil is a bad idea. It burns very easily. I usually just use canola oil. It satisfies my craving for popcorn without dirtying any dishes! |
