This recipe is really great!!!! It takes time to make it, but it's not hard to execute. When you cook the fruit the aroma is amazing, this is a fun recipe and it tastes GREAT!!!

When mixing the butter into the rum-soaked fruit, it simply was the mouth-watering aroma of butter rum . . . wow!! The best fruitcake I ever tasted and it was the first one I ever made!!!! I will make more. It cost me $8.50 to send one to my sister in Florida and well worth it!

Excellent, but too salty

User: SARAH from Davis, CA    User Rating:
This fruitcake was, indeed, delicious and easy. However, I'm surprised nobody has mentioned how salty it is... my only modification was to use about 1/2c less fruit, and my cakes were terribly salty. From looking at other fruitcakes online, this recipe has almost 3x more salt than most. I'd reduce the salt to 1/2 or 3/4 t next time. Otherwise it was excellent.

the fruitcake for those who use to hate fruitcake

I love this recipe. I prepare it and send a few loaves to my sister in Seattle WA who looks forward to it every year. I made a few loaves and had to give them away as I would have "chipped" away at them before Christmas. The reason this fruitcake is so popular (I believe) is the lack of those citrus candied fruits which many people dislike and the melding of the fruits through simmering with the rum and sugars, etc. Keep up the good work Alton. I love your show.

Fantastic fruit cake!!!

My grandmother, who is from England, loves this cake it as it reminds her of the fruit cakes she used to make. I have converted the non fruitcake eaters of my family to fruitcake eaters!!! Everyone expects me to make this cake every Christmas. I highly recommend this recipe to anyone. It is a great holiday treat.

What great presents!

We made these last year (and this year) we used one of those mini loaf pans last year and all we have heard this year as the holidays draw near is "are you going to make bigger fruitcakes this year? If not, we want 2!" I bought most of the fruit in bulk at Fred Meyers so everything was actually pretty reasonable for a gift people love. We wrapped them in green cling wrap and tied them with red ribbon, so beautiful!

I love this cake

This shouldn't be called fruitcake, because all the other fruitcakes ever invented have given the word "fruitcake" a bad name. Maybe call it "fruitspicenutbread".

Soooo Good!

I have a tried and true fruit cake recipe but decided to try this one and am so glad I did! It is absolutely delicious. I made a double batch and will be buying more dark rum tomorrow to make another double batch!

Once upon a time, I hated fruitcake. I am now a believer. This fruitcake will blow your mind. A Jamaican friend suggested making it darker, i.e., substitute brown sugar for some of the white sugar. I think I'll give it a try. A note on rum: as with wine, use only that which you would drink, preferably neat. I am a rum fanatic, so I chose Appleton Estate 12 yr. Pricey for cooking, but it shines through. You're a good man, Alton Brown.

This recipe for fruit cake is outstanding. I made one five years ago. Believe it or not ,it is still moist and delectable. Unbelievable. Just keep it moist and well wrapped and I think it would outlast me.

Excellent!

I have made it twice, the second time I did not use Brandy, only the Gold Rum, also I found out that the Zest of an orange and lemon is only the color part, if any of the white part gets in your recipe, it will make the cake have a bitter taste, I did those two things on my second try and it was the most delicious moist fruit cake I ever had, my family loved them.

This is a labor intensive (especially if multiplying recipe) process but so worth it! This is the first fruitcake I've enjoyed so it was the first fruitcake I made and sent out as gifts. It is yummmmy!

Turned out great

I was worried because it was green when I put it in the oven, but the color turned a nice dark brown after it baked. My in-laws want the recipe. Unfortunately we ate it all before we could find out if it got better after a month or so.

Spectacular! (& substitution ideas)

I have baked free range fruitcakes twice now and will again before the holidays. It just disapears! The first time I mixed it up I didn't have dark rum to soak the fruit so substituted hazelnut liqueur which was great with it. It is hard to find currents so I've added candied orange peel and dates with good results. The recipe bakes well in smaller containers, even oven safe bowls or fancy individual bundt pans. My family will never want any other fruitcake, this one is superb! Thanks Alton!

As a fruitcake skeptic but loyal student of the Altonian Principles of Culinary Science... I made 2 of these cakes. I am so impressed! The cakes are moist and are not overpowering. The dried fruits plumped nicely and bring a lot of flavor and texture to the party. It slices beautifully. This is a cake I am very proud to serve and would absolutely give as gifts. I recommend making this cake 2 weeks in advance of serving but there is no doubt in my mind that this cake would stay fresh and edible for many months with proper spritzing and storage. It can only get better.

WONDERFUL!

This is the first fruitcake I've ever enjoyed. The change from those candied fruits sure helped. It's also the first I've ever sent out to family members (who loved it). I'll be making at least one loaf (for myself) this year...more if others are lucky.

Was was there to like about fruitcake? It was bitter, had funny colored fruit in it and tasted, well, not very festive. This fruitcake changed my mind (and that of many others). I have made it for the past 3 years and it is a new family tradition. I often serve it to people and don't tell them that it's fruitcake - when they asked they are very suprised. It also keeps VERY well. I have had a loaf for over a year and it's still good. Heck, if the Scots used to keep fruitcake as long as their marriage I figure a year makes my fruitckae a baby. And it tastes better as it ages!

I've been using this recipe the last couple of years. Never seen a fruitcake disappear so fast. Go with a cup of pecan's if you're a pecan fan. I prefer to skip the brandy and just use the gold rum to spritz it with.

A most excellent fruitcake.

I would give it 5 stars on taste alone, but have to reduce it to 3 stars for practicality due to the amount of fat and refined ingredients. I'll make it as is for Giftmas from now on, but I'd like to try to make a more healthful version for the rest of the year.

Finally, a FruitCake that can actually be eaten!! I've even made some FruitCake converts with this recipe :-) I have to live Gluten-Free...that means NO flour in anything!! Recipes don't always translate well...but this one worked well. Finding a GF alcohol can be difficult, but changing the flour to GF flour was easy. I served this FruitCake to over a dozen guests and they ALL enjoyed it. Thank you!! WyndStarr (GlutenFreeFlorida@yahoogroups.com)

We have a running joke in our family that fruit cake cannot be appreciated by anyone under the age of 65.Wrong! This recipe produces a dense and flavorful cake without the addition of those wierd gummy bear like pieces of "citron" found in many fruit cakes.I ate half of the first batch that I was intending on giving as gifts.A new tradition has been born!

Fabulous Fruitcake

First, when I was cooking up the macerated fruit, my family pleaded to just refrigerate it and use it as an ice cream topping (probably not a bad idea at that!). But when the cake was baked, it took some real discipline around here to hold off two weeks. I admit to enjoying even those candied "fruit" versions, but this is the absolute best. It was devoured by those who hate fruitcake as voraciously as those who adore it. Has anyone prepared mini-loafs? How long should they bake??
