With the smoked cheese being the dominant flavor, the taste of the eggplant, Marsala, basil, and other ingredients was totally lost. The most time consuming part was grilling the eggplant, which I did on the outdoor grill. I did not have a problem getting the timbale out of the pan, I think because of the olive oil used when grilling the eggplant. I think next time I will cut my eggplant lengthwise for easier formation. My timbale looked just like the picture, and was very yummy. It could feed an army! Then next time I will freeze the cheese to grate it as it is so soft and hard to manage, also the same for the pork. Everybody just loved the meal and requested it again for next month. Had to give the recipe to two stores before they would sell me the cheese. They will be serving it in their resturant they said. And looks so impressive and beautiful when you take it out of the pan. The smoked mozzarella and fresh basil, the grilled eggplant...yum. I used the George Foreman grill to grill the eggplant and it worked like a charm. It is not hard to make, though it does take a little time. It was WELL worth it. I usually don't use store-bought marinara but it was just fine. Unfortunately, I couldn't find smoked mozarella and had to use regular...but it worked just as well. The only thing I will do differently next time is PEEL the eggplant. I prefer eggplant dishes without the skin. A really, really good dish! |
