This is a great recipe for leftover ricotta cheese and you must use the smoked mozarella that is what really makes these morsels THE BEST.

These fritters were so yummy! Since I am not a big fan of smoked Mozzarella I used half Gruyere cheese and half regular Mozzarella cheese and they were just as good! The dipping sauce was also good, it was very tangy. I would definitly suggest you give these a try they are a little messy but totally worth it!

Everyone loved these! My suggestion is to make the balls smaller than the recipe calls for: the recipe will go farther, and some will enjoy biting into less cheese even better!
