This was a great recipe for the whole family. My toddler loved it and it was a great way to get him to eat vegetables without even knowing it. Really good protein content as well. I used lite coconut milk and lite peanut butter as well to decrease the amount of cholesterol and fat in the soup for my husband and me. Really easy to make, even for a non-cook like myself!

I made this last year as a twist on our more traditional butternut squash and apple soup. I received raves and requests to take some back to dorm for their friends. Definitely easy and exotic twist.

This the best recipe. I have used it many times as a soup, sauce, or dip. It serves nicely with a flour tortilla, over thai rice noodles, or as a dip for vegetables, bread, or chips. I love it.

Just made this soup and it was totally awesome!!!!! Was not too sure when I was making it, it looked kind of strange with the various ingredients, but everyone in my family loves peanutbutter, so I gave it a shot! BULLSEYE!!! Everyone loved it, even my sometimes picky 4 year old!!! This will definetly be a family favorite!!

This is a recipe that is better than the sum of its parts. I used mediocre peanut butter and it still came out great. The flavors meld together to make a new, complex flavor that seemed smoky. The thing that surprises me is that the flavors blend so well in such a short time. It is excellent when newly made whereas most soups and stews need a night in the fridge to improve. This will become a standard everyday dish. (I wouldn't serve it to company because the potato-y texture is not elegant.)

After all that hard work, we ended up throwing out the whole pot. This was aweful....even though all the ingredients sounded good. My stomach turned after one taste.

Although the ingredient line-up looked a little strange, I gave this a shot and it is excellent! I made 2 substitutions; I used canned fire-roasted tomatoes and vegetable broth (I am vegetarian). Only problem was trying to decide what to serve it with! I wanted this to be the star of the meal! Very different, very tasty soup.
