Healthy Egg Salad

I have made this SEVERAL times and it is pretty darn close to real egg salad. It is nice to have a guiltless recipe when cholesterol is an issue. The healthiness of the recipe makes it easy to overlook the bit of difference in texture and creaminess of the real thing. Thanks Tyler!!!!

this was a great recipe that got me through some busy days. i made it at the beginning of the week, and it would be good for the week. highly recommend to not use soft tofu, definetely something course, i personally liked the recipe with firm or extra firm. the texture is nice. awesome recipe, easy to make, and a good place to start for those of you who are looking to become a vegetarian.

My daughter is vegaterian and I used to by a eggless salad at the grocery store for about $5.00 for a pound. My daughter loves this version and it is so easy to make.

I enjoy tofu and was excited about this recipe. It wasn't as good as I hoped it would be. I did use a lowfat tofu and I wonder if maybe that affected the flavor.

I agree with the previous recommendation of using firm tofu, which is easily mashed using a potato masher.

Not only is this recipe real easy, it is delicious. I have had many eggless egg salads, this is actually one of (if not the) best one I have had so far. My meat eating friends enjoyed this one too. I would maybe use less cayenne pepper

I am not a vegetarian, but I wanted to add more soy to my diet. This was very good, although I made a few modifications. I used real mayo (anything less is not my cup of tea), hot curry powder instead of tumeric and cayenne, and lots of chopped red onion instead of green. It tastes great and does have the consistency of egg salad. I will make this again and both my husband and I enjoy it for lunch.

Ican't eat egg so I try this recipe. I love it is just the texture and the flavor for egg salad ( Tofu is not one of my favorites but I try it )

My husband didn't even know it was tofu - he said 'boy these eggs are really fluffy'. I spooned the mixture over arugula, and was it ever spicy! This is definitely a keeper!
