It is nice to have a guiltless recipe when cholesterol is an issue. The healthiness of the recipe makes it easy to overlook the bit of difference in texture and creaminess of the real thing. I have had many eggless egg salads, this is actually one of (if not the) best one I have had so far. My meat eating friends enjoyed this one too. I used real mayo (anything less is not my cup of tea), hot curry powder instead of tumeric and cayenne, and lots of chopped red onion instead of green. It tastes great and does have the consistency of egg salad. I will make this again and both my husband and I enjoy it for lunch.
