They are honestly the best tamales I've ever eaten. I can say that modestly, because the recipe came from Tyler Florence. I substituted pork for the beef, and must have made mine larger, because the recipe only made 1 1/2 dozen, not 3 dozen. I made 3 batches of masa, and only doubled the meat and sauce. Wonderful! I don't understand why the other chefs use extra "weird" ingredients. You're #1! I had to add a bit more flavor in the sauce - more salt, a bit of sugar and 2 full lime juice. My family loved it. When you bite into them, they taste like authentic mexican tamales (and I should know I live in San Diego.) I suggest you prepare this in batches, make the meat the day before, otherwise it is too much. I also had 1/2 of my beef mixture left over (I think I may of used a tad bit too much mesa) so I froze it to use for next time. I also ended up throwing away 1 packet of the corn husks. However, I had to drop a note regarding this recipe. VERY easy to do, and an OUTSTANDING flavor. Yes, they are time consuming, but well worth it! The only adaptations I made with this recipe is that I made a little extra of the "chile sauce" and added some to the masa mix for extra color and flavor. Also...., I added a tablespoon or so of Beef Bouillion powder to the masa, although I dare say it probably didn't need it. My husband took these to work, and they went so fast that others continued to come up to him and ask, "When are you bringing more in"!! I've already got plans to make another batch for the upcoming fourth of July Holiday get together for my family. Mmm mmm good!!! 04/26/2008 at 07:01pm User: Andrea from Clackamas, OR User Rating: Some things I learned while making these tamales are: Use a stand mixer if you have one, I used a kitchen aid mixer and the dough turned out very smooth, I couldn't imagine having to mix the dough by hand. And the beef broth was cold not warm when I added it to the mix and it didn't seem to make a difference. Second: After cooking the meat and adding the sauce I tasted it and it wasn't salty enough for me so I added more. Almost too much, make sure that if you do add more salt to do it in very small amounts and to mix it very well. I didn't and I'm sure that's why it came out a bit too salty. Third: I think on the first batch that I steamed I spread the Masa too thin, so when they were done (after only an hour) the filling came out a bit or it didn't seal properly. The second batch I spread it a little thicker and it turned out fine. I will surely be making these again. They are time consuming but not difficult. Best to break it up over a couple of days. Turns out, I was right. However, I recommend seasoning your meat with more than salt and pepper;try some oregano make it more authentic. Also, if you plan on feeding them to kids, you can use New Mexico Mild Chiles as your sole chile. If you do, they'll be mild enough for your little ones. I also made about 1/2 of mine with chunks of Pepper Jack cheese instead of the meat and they are great! HOWEVER, my husband DOES like them. So I devoted two days to this process, and I was rewarded with the happiest husband anyone has ever seen. And yes! I loved them too. Finally, as much as I want to think that Tyler is a bit ofay, he really does have amazing recipes!
