I inherited my Grandmother's pressure cooker, and was scared to use it because I had no instructions. She used it all the time, so I knew it was safe if used properly. Now that you made sense of it for me, I use it for a lot of things. The directions were great. Grandmom would be happy. Thank you!




Great Broth in a flash

I make broth and stock very frequently. Homemade is so much more flavorful and has little sodium, but it usually takes so much time. I saw the episode where AB made this broth. I tried it and the flavor is amazing! I use it for a base in soups or any other recipe that calls for broth. I even drink it straight for a warm up on a cold day. It is so fast, easy and great tasting. You'll never go back to canned again.

Absolutely fantastic! Used this as a base for a beef stew, and the results were amazing. I've never eaten anything involving beef (including $100 filets) that could even come close to what you can accomplish with $10 worth of meat and this recipe. If you don't own a pressure cooker, this recipe ALONE is worth the investment. (although you can use it to make the stew as well!) One note of advice - the depth of color in your broth will be determined by how far you go in searing the meat. If you like a rich color, go further in the browning step, but be very careful not to burn the meat.

Tastes way too much like onion and not heavy beef flavor. Has a lovely jelly like consistancy after sitting over night. I will try this recipe again, but go easy on the onions.

I'm a HUGE fan of all things Alton and normally I would have trouble finding fault with any of the recipes from his show because they consistently turn out well, but the beef broth one was kind of disappointing. I followed the instructions to the letter (shank and oxtail pieces from a local meat market that I thoroughly browned for the broth, fresh parsley, filtered water, fresh veggies, etc.), and the resulting beef broth looked more like a chicken broth or chicken stock in color. I had been expecting more of a darker brown. More importantly, the flavor is a little weak. I added some salt and that improved the flavor slightly, but overall I still thought it was lacking. I bought double the ingredients so I could make two batches so I plan on trying again tomorrow and we'll see if I end up with different results.
