I love tiramisu and never miss a chance to get it when in an Italian restaurant. Recently I had a few fairly disappointing servings of Tiramisu and decided to try and make one myself. When I searched for a recipe Tylers came up, and since I have always been thrilled with his recipes I have was happy to try it. It came out amazing! Among the best of tiramisu's as far as I am concerned, and I have tried a lot of different tiramisu's. I did double the mascarpone mixture. I made the zabaglione cream over a double broiler, but made sure to strain it when I was done to get rid of any bits of cooked egg. I love Tylers recipes and this one did not disappoint! Made it the night before so it would have time to set. The zabaglione was a bit challenging since I wasn't sure the consistency was correct (it turned out fine and set perfectly in fridge). I doubled the filling and had to make 50% more of the chocolate/coffee mixture. I did use coffee liquer instead of rum because I didn't have any. I would be curious to taste the version with rum. I think this is the best. It has been hard to find a truly traditional version - especially one that includes the Marsala wine. One of them said it was the best tiramisu she had ever eaten (it's her favorite dessert). I took the advice from other reviews and doubled the zabaglione. I'm really glad I did. I also added some sugar to the coffee/chocolate mixture. It tasted a little too bitter. You have to be careful not to soak the lady fingers. As per most of the suggestions, I doubled all the ingredients, except for the Lady Fingers. I did end up having some (fabulous) custard and espresso left over, but I enjoyed knowing that I had enough to apply with wreckless abandon! As I am not a coffee or espresso drinker, I don't know how to brew espresso. I used instant espresso, which more than sufficed. This recipe was not just good...it was insanely good. It is my husband's favorite dessert, and I sprung it on him as a surprise. I tell you, when he tasted it, he was speechless - and I don't mean in a bad way. We had ten guests around the table at that time, and my husband jokingly (or not) put the entire tray of Tiramisu on his plate! A happier man you've never seen...! I let it chill overnight and the next morning the marsala got soaked right into the tiramisu because the strong smell was gone and all I could smell was a magnificent tiramisu. My husband and I really love tiramisu and I can't believe that the one we love the most, thus far, is the one I made from this recipe. Tip: Don't feel like you need to dip the entire lady finger in the coffee mixture. I dipped the lady finger sideways and only got the top or bottom wet and it was enough. Dipping the entire lady finger in the mixture will produce a strong coffee flavor, which is great if that's what you're looking for. You have to try this recipe!! I omitted the rum and made sure the wine was cooked off in both the cream mixture and the espresso mixture for the youngsters. For the adult version, I'd probably use brandy instead of rum. I read the reviews and actually doubled everything, except the ladyfingers. The espresso mixure definitely should be doubled-- the cookies soaked it up very quickly and I almost ran out. I like a bit more custard and after doubling it I had some left over and made a mini dessert. My egg mixture thickened nicely, but took a while. (I read somewhere it should reach a temperature of 160F.) I also whipped the cream too long- stiff peaks- by accident, but it still folded in well. Was not soupy as some reviews warned and it thickened in refrigerator in a couple of hours. Very delicious. Takes a while to make this but it is well worth it. Will make again and again. It was a major hit with the whole family in my house, and with my in-laws. I would have to say that the directions did not make clear if the Lady Fingers were in a single layer or two broken apart. I made this a couple of years ago with great success, but this time I altered the recipe just a bit. Once I stirred in the Marscapone,I split the Zabaglione and stirred in 2 oz. of melted dark chocolate, so one layer was chocolate and the other was normal. Takes about an hour to prepare but well worth the extra time and care -- the result is the creamiest, most decadent, most complex tiramisu I've tasted. I just can't let my mother-in-law, who is from Italy, know that I have a recipe to top hers! One bit of advice: The recipe suggests letting the tiramisu stand for two hours prior to serving; yet, I've found it takes a least 24 hours for the lady fingers to soften to the desired texture and the flavors to mellow. First time using marsala wine (previously used rum or Apricot brandy) -- I think that was the key, the custard was rich and delicious. I also doubled the recipe for the marscapone topping, which yielded a 9 x 12 pan and then a little extra.
