I followed the recipe almost excactly, except I omitted the borboun and the gingersnaps. There was not a single bit of ham left over after Christmas dinner. My 8.5 pound ham took 3 hours for the first cooking portion and about 30-45 minutes for the last. Not messy (and I am not a neatnick in the kitchen). Absolutely fabulous flavor and ultra moist. (I think I started with a good ham) I followed the recipe exactly. So easy, so delicious. We knew that 3 or 4 of our guests wouldn't eat ham, so we also cooked 2 chickens, plus a huge array of side dishes and desserts. Almost ALL of the ham was eaten, and we only had a few scraps left the next day! This is truly a foolproof recipe--we had some trouble with our oven temperature and the ham cooked much quicker than expected in the first part of the cooking, so we had to leave it out for a while. Then it took a bit longer than expected in the final part of the cooking, to get a good crust. It still turned out great! We used a blend of equal parts Gulden's spicy brown mustard and Grey Poupon Dijon with a tiny bit of yellow French's, but otherwise stuck to all the ingredients and instructions exactly. Don't omit the spritzed bourbon, brown sugar, or crushed ginger snaps--these are all esential! Next time I will buy a bigger ham so we have more tasty leftovers. I am definitely looking forward to some soup with that ham bone, though. When all was said and done, however, there was nothing particularly outstanding about the ham. After 5 hours in the oven it was a little dry. The crust had a strong flavor, which is ok in small bites, but nothing you want to eat a lot of. And it goes soft and pasty as soon as the ham cools. We had to purchase bourbon for the recipe, fortunately only a tiny sized bottle, but you cannot tell it had been used (only one quick spritz) so if you don't have any you might as well leave it out -- just use water to set the crumbs. I doubt we'll go to the trouble of making this again. I could feel the headache coming already. Then comes in Alton Brown with his great recpies AND explanations why food does what it does. Works great for a tech geek like me. So why so important to a ham? I was always duped into thinking that the thing my mom bought and put cloves in WAS ham. Now I have the recipes BETTER than mom used to make and I teach her how to cook some of these wonderful concotions. Mom's cooking has been foiled, (to a certain degree) Now the legacy lives on and my kids will long for Dad's cooking. (that's me.) This ham is easy just as most of the Good Eats recipes are. keep a copy of the video on hand and rewind and watch the whole process. You cannot go wrong and you will end up with a great ham. One thing NOT to skimp on.. is the utility knife. Now don't be lazy and use the same blade you were using outside.. get a new blade in that knife. using anything else will just end up getting you hurt. Otherwise, the recipe and the show (if possible) will keep you in good graces with all of your guests. I was very tired of the usual ham with pineapple recipe and saw Alton show this recipe. I was a little nervous about the bourbon at first, but trust me the flavor is amazing. I use Grey Poupon mustard in this recipe because it just taste so much better in my opinion than the cheaper mustards. I coat the ham with my hands, as I do with the brown sugar. I like a heavy coating of these two on it. The diamond cutting into the skin may be a little difficult at first, but just take your time. The more you do it, the better you get at it. The ham will have an amazing crust on it and be so sweet so if you like a good, tender and sweet ham this is the recipe for you. I'll never make another recipe for as long as I live! I suggest placing the ham on a stand where you can reach the lower areas when painting the mustard, and packing on the brown sugar and gingersnaps. If you do it in the roasting pan, the sides of the pan make it difficult to get the lower areas covered. Just a tip - if you make this a little ahead, and feel it needs to be gently reheated, line a pan with foil, drizzle just a small amount of apple juice over it, and poured some in the bottom of the pan first. I have not used the gingersnaps yet as I always seem to forget to add them to the grocery list, but even without them, this ham is wonderful. It is pretty simple to do, and the aroma is unbelievable! We never had had other than on Christmas Eve at my sister's (she gets a honey baked ham). However, since making this a few years ago, I have to make it on Christmas Day and several other times a year at the insistence of my husband. By the way, the leftovers are marvelous chopped up and sauteed in an omelette - Bless you AB! BY FAR the ham got the best reviews. I did not have bourbon so I used Dewars Whisky. I bought the cheapest hock ham at Super Walmart I could find and everyone thought it was great. Make sure you get all of the fat off and make sure it is dry before you put on the mustard and brown sugar. A must try.
