I highly recommend finding the Good Eats episode "Let Them Eat Foam" on YouTube (I searched for Alton Brown cake)in which this cake was featured because it really helped me know what to look for when whipping the egg whites. Can't wait to try this again with a different flavor extract. There is invaluable information that Alton gives that you can't gain from reading this recipe. Make sure you use the right ingredients. Don't substitute anything (except the extract if you like a different flavor). I used a stand mixer the first three times and just recently got a hand mixer. HUGE difference! The hand mixer does it so much faster. My only warning: If you are looking for a light, fluffy, slightly sweet cake, this is not the cake for you! This cake is SWEET, thick, moist and dense. However, this recipe turned out fantastic (the second time!). You really have to process the sugar and get the whites to the right stage. I am an experienced cook, but don't bake much and only made an angel cake from scratch once before. Otherwise used the box...well, never again from the box. I figured maybe I hadn't whipped the egg whites stiff enough, even though I had taken them to medium peaks. I was very pleasantly surprised, however, when I tasted the cake. It was delicious! I frosted it with whipped cream blended with melted Hershey bars. It was absolutely delicious! I'm still not sure if the cake was supposed to turn out this way...but I'm glad it did. Since it was Alton's recipe; I decided to try it. Well, I never! First of all you do not add water to egg whites and expect them to whip up. Usually, you add the cream of tartar and then whip them and slowly fold in the dry ingredients - you do not add the salt with the cream of tartar you should put it in with the flour, etc. I did it the way Alton said to do it and it was a complete flop: more like a sweet white omelet than a cake. You all would be better advised to get another, better, recipe off another site. Sorry, Alton, obviously you did not really make this cake and I hate when that happens because I have now wasted an entire dozen eggs for nothing. Oh, I used almond extract; if it matters. I was never able to achieve those "medium peaks" he spoke of. After beating the egg whites, cream of tartar, water, and flavoring for almost 45 minutes, I still had no real peaks. I opted to put it all together anyway, even though this made the folding of the dry ingredients into the egg white mixture a lot less easy than Alton made it look on television. Still, I persevered. Well, let me tell you that I was DEFINITELY rewarded for my efforts! The cake came out absolutely perfect! What could I have done wrong? Could it be that I used organic cane sugar? Was the flour not folded in enough? Any recommendations would be appreciated. My cake pan, however, has three little feet which destroy the cake! When I flip it over to cool, the cake quickly comes out instead of staying in the pan (it's a 2 piece pan). And no, I didn't lube the pan before hand. The weight of the cake and the design of the pan do not allow the cake to stay in once you turn it over. IF you are buying a pan - don't get the legs on it, but make sure the center tube sticks out past the pan height. Instead of using egg whites that i had separated, i bought a carton of egg whites at the store (i never know what to do with the leftover yolks!).
