This avocado stuffed chicken salad was very good. It made an excellent lunch for the office. Even had a few co-workers coming to my table with forks to take a taste....they didn't know I could cook that well.

This is a good recipe to change around it is also good with the already cooked chicken which makes it a quick dinner.

This is a great recipe, but I changed it a little. I used purple onion and actually put chunks of orange in the salad, onion and orange... the perfect combo! I didn't put the red peppers in, but I rubbed the chicken with a chotle sauce before cooking so it had a kick!

This was such an easy, yummy recipe! I did cheat a bit and purchased already roasted chicken breasts, so it took me 10 minutes to put this meal on the table...amazing! I also used 1/2 real mayo and 1/2 low fat mayo and nobody noticed. This will be a perfect summer meal with some crusty bread and maybe even a simple green salad. Way to go Emeril!

I made this a couple nights ago and it was great. I used already roasted chicken and added a hard boiled egg. I served it as a sandwich on wheat bread with sliced avocado - I will make again! Thanks Emeril!!!!
