Use the scallions and dill and cut down the salt, serve on a croissant with avacado and you are all set. I get asked for this recipe every time I make it. I didn't bother with the poaching (although I'm sure its lovely that way). NOTE TO ALL THOSE BOTHERED ABOUT THE SALT CONTENT: The recipe calls for KOSHER salt, not generic table salt, which is decidedly less salty than the latter. I suspect many folks used what they had on hand, and if using other than Kosher, you should reduce the salt amount as you will probably get a too-salty flavor. I generally use Kosher when cooking and I found that the recipe as it was written was lovely. Now I get specific requests to bring this to every get together. I follow the directions exactly as written and it turns out perfectly every time. Don't skip the poaching process. It gives the chicken a great flavor, which you really need when the chicken is the main ingredient. I serve this with freshly baked yeast rolls. I cheat on this and buy frozen yeast rolls that haven't been baked. I make the chicken salad the night before, and then lay out the frozen yeast rolls to rise before going to bed. By morning, the rolls are ready to bake. This one is excellent. I followed the recipe exactly and found it well balanced. The ingredients melded well together without any one overwhelming it. I've found that just experimenting myself, I'll sometimes put too much or too little mayonnaise, or too much of something else. This recipe remedies that, just follow it. One warning, you might want a little less salt than it calls for. I liked this, but it is on the salty side. We love this recipe, the salad is even better the next day. I did add some red grapes to the salad that gave it a wonderful sweetness. In regard to the salt - I did cut the salt in half because I used a rotisserie chicken which are loaded with sodium. If you poach the chicken per the recipe (especially if you use low sodium stock/broth) you should be fine with the amount of salt listed. My changes were that I used a store-bought rotisserie chicken (instead of the poached chicken), used 1 scallion (instead of 4), used 3/4 cup mayo (instead of the whole cup), and used 1 tsp. Kosher salt (instead of 2). Delicious after just a few hours of refrigeration, and equally tasty the next day. I poached the chicken the night before just using chicken broth and parsley. Then I made the salad for dinner the next night. My husband, who doesn't usually like these mayo salad types raved about it. We used the dill and it has such a fresh taste to it. I highly recommend you try this. If you don't like your salads "saucy" like us just add the mayo mix a bit at a time till you reach the consistency you like. |
