I followed the exact directions given by "Vicky from Lincoln." This salad was one of the best salads I've ever had! Absolutely delicious! I added a little more garlic, around 4 cloves, because I always add more garlic. So incredibly flavorful and right on for an amazing Greek Salad recipe.

I agree with the Anonymous suggestion from 8/24/04, "The Real Thing". I mixed all the vegies and the Feta, except the olives; they are not a hit in my family, with the FRESH ground pepper, and DRIED OREGANO. Toss salad and let it sit in the frig for about two hours. Then took the garlic cloves, used 3 instead of 2. Smashed the garlic and worked it with the kosher salt to form a nice paste. Then mixed it with fresh squeezed lemon juice, extra virgin olive oil, and chilled for about 1/2 hour. Tossed dressing with salad just before serving. It was wonderful! Served it with Sara Moulton's "Kofta Kebabs with Tzatziki" served with warm pita bread and greek cheese pie in phyllo dough. Another keeper!

I also followed the VA reviewers tips, minus making a paste from the garlic (the easier the better for me!). Also, only marinated the veggies in the pepper and oregano for 30 min, but everything still came out great! Very flavorful. And while I dont normally add lettuce to my greek salads, I thought the addition was nice. Sometimes I felt like our non-lettuce greek salad was too heavy/filling or dull. The lettuce and adding the spices to the veggies (not the dressing) were a great change. This recipe will become a regular recipe for us! Husband loved it too.

I am giving this recipe 4 stars because it contains all the delicious components of Greece's most popular dish: Greek Salad. It would rate it 5 stars except one crucial elmement of preparation has been changed. There are Two keys to a Greek Salad (1) the Choice of ingredietns and (2) the seasonings spices and pepper are always added to the salad *dry*. This can be done a couple hours ahead and the flavors seep into the vegtables. Then, when it's time to serve the salad, the oil is added, then the Lemon or vinegar, and then salted. When the spices are added to the liquids, the flavors are lost. Many cooks try in vain to duplicate the taste they love,while using the correct blend of spices, but then mix the spices directly into the oil and vinegar or lemaon and finding the salad will never have the taste they are looking for. Also another tip, actually dried Greek Oregano, is the flavor you are looking for, not fresh oregano. And whether it is a Tossed Greek Salad or a village salad, which has all the same ingredients except for lettuce, the dry spices put directly onto the salad, before adding oil and lemon, will make much difference.

I used a stick blender to mix the oil and lemon juice. It turned out great, even without having Feta cheese.

This is one recipe that is so easy to make and the dressing is delicious! I squeezed the juice out of two lemons which equaled about 6 tbsp, and filtered out the seeds and pulp. I also minced my own fresh garlic. I highly recommend this quick and simple recipe!
