These were great--a little rich.

These were just ok. I love goat cheese but these were goat cheese overload! They could have used something to break up the goat cheese. Maybe tomatoes or some other vegetable. My guests seemed to like them however.

Sauce was great but very hard to work with the corn tortillas...fell apart. I love goat cheese but in this dish was a little too much. I will file sauce recipe and use it with something else.

Sauce Rocked. (I used left over for chili base.) Filling was good but the enchiladas totally fell apart. They were completely unrecognizable. Everyone said the taste was there but I wouldn't serve them to guests.
