Their wings and other restaurant's wings do not compare to this recipe. Frank's Red Hot Sauce, which I had never tried before, definitely adds a solid foundation to a wing connoisseur's delight. After the first batch, I added tabasco and other hot sauces to build on the heat to my taste. The flavor, texture, and gastronomic fulfillment were the best over all of my other experiences. Not eveybody likes em' real hot and I found by adding a dehydrated and then reconstituted habanero to the sauce, nobody will complain there not hot enough. I always add some minced shallots to it and throw in some fresh flat leaf (Italian) parsley. To cook the wings in a 400 degree oven for another 35 minutes after they have been cooked in the oil. That is whack da wiggidy! Most recipies call for the wings to be deep fried for 12 minuets and tossed in sauce. Then if you want the wings to soak up the sauce, you place them in the oven for 5 minutes. Not 35. Dayum. But the key here is to re-toss the wings after they come out of the oven to have a generous sauce coating on them. The only change I made was I left out the lemon and added garlic powder and celery salt for the oven. Will make them again. |
