If you like noodles and mexican food you will love this. It sounds odd but very tasty and easy to do. (Although not so odd if you've had mexican sopa with fideo.) I made with only 1 chipotle and it was hot enough. My picky husband went for seconds, definitely a keeper. This is a great recipie to use leftover turkey or chicken. My 2 1/2 year old really enjoyed it until the heat grew on him. Next time I will make without the pepper so he can enjoy it also. I used queso quesadilla cheese as it melts well and I had it on hand.

While the flavor of the dish was acceptable, there just wasn't enough cheese (or anything else) to hold the recipe together. rather disappointing

I wanted to try something new, so I made this dish last night and was very satisfied. I used leftover chicken and I also used queso quesadilla. My husband liked this dish as well. I will be making this dish again.

I found this recipe while looking for an idea for turkey leftovers. It is fabulous. I have made it several times and it never goes to waste. Full of layers of flavor. Try it, you will love it.




Challenge to cook, but excellent flavor

The hardest thing was the cooking of the Vermacilli. It was messy and if you do not have the right pot or tongs part of the noodles would be over cooked and others will be undercooked. Also, you will need to make sure all ingredients are pre measured and ready to go because the timing from the red onions through the seasonings are critical.
