Way too much SALT!!

Didn't anyone find this too salty? I rinsed the eggplant as instructed but the amount of salt added to the marinara sauce and to the breadcrumb mixture was just way too much. We could barely eat it!! My husband usually uses quite a bit of salt on all his food - good thing I warned him to taste it before adding more table salt. Yikes!!

This was so tasty. However, it was A LOT of work. I didn't have time to make the sauce. So, I used a jar from the store. Next time I'll be sure to give myself more time. Definitely takes longer than 1 hour and 15 minutes to prep.

My husband and I love this.This is the first time I tried eggplant Parmesan and it was a very easy recipe to follow. But the only thing I didn't like in this was the taste of fried oil which was very distinct. Though this was a problem only for me and not for my husband

Made this the other day....everyone loved it...the sauce is wonderful, the eggplant crispy and delicious...it's definitely a keeper! I liked it better than the Eggplant Parmesan at Carabbas, homemade is always great, but this was superior!

It did take me a while to make this recipe,but the results were definitely worth it! I've already put the rest in the refrigerator. Can't wait to try it again tomorrow! When I go to different Italian restaurants and order this dish, sometimes I am not happy because the eggplant is mushy. Frying the eggplant left it nice and crispy...the way I like it...I did slice the eggplant thinner, however, and also used a bottled marinara sauce...Delicious!

we make this ALL THE TIME. After breading the eggplant - I bake it in a 350o oven for 15-20 mins rather than frying. Lower fat yet still absolutely delicious.

Many people at my end of the summer party ate this and admitted that they did not like eggplant. They ate this because they didn't know it was eggplant and raved about it. EXCELLENT sauce for the eggplant and EXCELLENT breading as well. This recipe is rated as "medium" but I will tell you it was very easy to make, in my opinion.

This is wonderful. But I agree w/ a previous reviewer- double the sauce. I doubled the cheese, too. You can save time by using jar marinara (Newman's Own is very good).

I've made Eggplant Parmesan in the past, but no where as simple and easy to do as this receipe. We grow our own thyme, basil, oregano and other herbs like rosemary as the such, we just used our home grown spices and followed your recipe. It turned out beautiful, so nice looking we took a picture of it prior to going in the oven.

This recipe was not easy or quick to make but the result was worth it. I don't know if sprinkling the eggplant with salt and letting it sit for an hour really makes that much difference, since I have never cooked eggplant before, but now I will do it everytime. It was fabulous! I loved the crispy eggplant layers between the sauce and cheese. I took leftovers for lunch the next day and expected it to be mushy and not good, but it was still delicious, not crispy, but still good.

Eggplant Parm rocks! This recipe is proof of that. Everyone that has sampled my dish absolutely loved it. Serve it up with a nice green salad filled with tomatoes,green peppers and cucumbers topped with a hint of dill weed and you have a very filling dinner. Of course don't forget the garlic bread (homemade of course!)




Even hardcore Italians loved it!

This really was very simple to make, and I was astonished at how gently the eggplant cooked in the oil (next time, I will have a thermometer, however--burned the first ones a little bit). I served it to a couple of Italian guys, and they said it was the best they'd ever had. And my husband, who generally doesn't like Italian food, said it was wonderful.

Maybe it's just me and my darling wife, but in the past few years when we dine out and order the eggplant parmesan, we end up getting two maybe three round slices of breaded and fried eggplant with just a dollop of sauce and a small bit of cheese between and on top. Usually served too hor to eat for ten minutes looks like an appetizer on the dinner plate. This recipe restores eggplant parmesan to its rightful place as a superb main dish.

I was a bit skeptical prior to making this recipe. Other eggplant dishes I'd tried just didn't taste right. While this dish does take some time to make, the result is mouth-wateringly delicious and so worth the effort. I used jarred sauce to take out some of the prep time. My husband and 3 year old daughter absolutely loved it. This is a new staple in our home. Oh, and like other Italian dishes, this tastes even better the second day.

This dish was a really big hit! Not very difficult, as the recipe is forgiving... I had accidentally let the oil get a little too hot for the first batch of eggplant, but used it anyway and you couldn't tell in the final product. It was all flavorful & delicious! My husband said that if he ordered this in a restaurant, he would order it religiously thereafter! Thanks food network!

I made this the other night and it was wonderful1!!! I would cut back about 1 cup of the sauce though. It tended to "overpower" the eggplant.

The recipe is easy to follow, and hard to mess up - it does take a while to bread all the eggplant. I used 3 medium eggplants to fill a 9x13 baking dish, and most of the other ingredients can be eyeballed.

A better way to dry out the eggplant: slice up the eggplant the night before, place in a collander in the sink with a plate over the stack of eggplant slices and a weight on the plate (I used my 5 lb canister of sugar, but you can use a heavy can). Let set overnight and the weight will naturally press the excess water out of the eggplant. Works great. I loved this recipe.

I like this recipe. Don't usually make the marinara and doctor it down so that I don't make as much because it will go to waste. Now I make this instead of buying. Save money as well as the simple fact that when it's homemade you know what's in it and you know your hands are clean and all of that stuff. Highly recommended.

This is an excellent dish! Everyone loved it! Even my 1 1/2-year old! While the initial prep is a little time consuming, it is well worth the wait! One the prep work is done, everything comes together in a snap.

This recipe is written a little more complicated than it needs to be- and you do not need all those eggs! I cut the flour eggs and breadcrumbs in half and it was plenty. The flavor was good but a little more bland than I prefer.

After looking at several recipes for a classic eggplant parmesan, I decided on this one. Classic, meaning fried eggplant (as opposed to broiled or grilled) with marinara sauce. For all of you cooks out there, I salted the eggplant with LOTS of salt.. and for an hour and a half.. Rinse real good with cold water to get the salt out. Comes out meaty marvelous!!

Very tasty, but quite a time investment to put together. Do NOT skip salting the eggplant - this makes a big difference in removing the bitterness of the eggplant. Overall, this dish was flavorful and the eggplant was tender, not spongy like I've had at some restaurants. I will definitely make it again but only for special occasions.

This was truly a wonderful recipe. I had never made it before, and it turned out exactly the same or better than some of the fine italian restaurants I have visited. All in my family loved it. The prep time was a little long for a weekday meal but WELL WORTH IT. The leftovers even reheated well and I enjoyed them, though right after cooking when it is at its best. Try it. You won't be sorry.

I have never made eggplant parmesan prior to making this recipe. The eggplant was somewhat bitter, even after the weeping process, in comparison to what I am used to at Italian restaurants. 1/2 inch slices also were to thick for my taste. I will definitely try the recipe again with thinner slices and more salt during the weeping process because it is a great starter recipe.

Excellent recipe! After reviewing several of the recipes on the FoodNetwork for Eggplant Parmesan, this one seemed the easiest so I tried it. Really delicious and we used marinara sauce from a jar rather than the one in the recipe and it was still really yummy. I would highly recommend it!

This recipe may look complicated but it is really quite easy, just follow step by step. It's the best Eggplant Parmesan recipe I've ever tried. My kids will even eat it. People who don't care for eggplant will be surprised. The fresh marinara is wonderful to have, but jar stuff would suffice too.

My wife's favorite Italian dish is eggplant parmesan. I made this recipe for her and she now says my home made is better than the restaurant and she brags to friends. I must admit I do not make the sauce, though. I usually buy a jar of sauce made with red peppers for a little kick.

This was a great recipe. I was always afraid to try my hand at cooking eggplant, but this recipe was very easy to follow. I did make a few changes, like using seasoned bread crumbs and omitting the thyme and oregano, and using Bertolli marinara instead of making the sauce. I also reduced the amount of mozzerella and marinara used, so you could really taste the eggplant(some restaurants smother it and all you taste is sauce). My husband and son loved it and even enjoyed eating the fried eggplant before it was cooked in the sauce. They probably would have eaten the whole batch if I didn't keep an eye on them!

I used this recipe for a potluck and everyone really went ga-ga over it. It's easy and fun, but pretty time consuming, so make sure you have a few hours on hand to make it delicious. Weeping out the bitter juices is more important than you can imagine!

I prepared this a few week back, and the prep time did take a while (especially if you make the "quick" marinara sauce as well), but the eggplant parmesan came out excellent, and was well received by all famiyl members - and we're a meat and potatoes type family! Try it, you won't be disappointed.

I made a few changes to the recipe, but it still worked out great. First, I did not cover the eggplant with salt and let drain. I used it as is, and it wasn't bitter at all. I decided not to fry the eggplant to cut down on fat, so I baked it for about 10 minutes before adding the other ingredients. I actually like it better that way, less greasy and the flavor of the eggplant comes through.

This was a great simple recipe. I consider myself a good cook but I always had trouble making eggplant dishes. I love eggplant. The eggplant "purging" was just the trick. This time my eggplant parmesan came out perfect.
