The chicken tastes great. My favorite part is the carmelized garlic cloves. Crispy on the outside and soft and mushy on the inside! Be warned, you will carry the unmistakable and strong scent of garlic with you for a while. Either make sure everyone has some or plan on some "alone" time afterward :-)

Great recipe for chicken, I did not have fresh thyme, so I used dried thyme with a bit of herbs de provence, did not use quite as much oil, and I used 20 cloves instead, I was afraid the garlic will be too overpowering. The dish came out great, will use a bit more garlic next time because they were so delicious =) The leftover oil has great flavor, dont throw it out! Use it for garlic bread or anything that requires garlic infused oil.

This recipe is so easy.The chicken was so nice and moist. The thyme & garlic go very well together. I've also used rosemary in this dish. Works rather well.The roasted garlic works great in mashed potatoes,homemade mustard, or as a spread. If you love garlic THIS ONES THE BOMB!!!

I am not the best cook but even my husband said it was good. I made mine with homemade mashed potatos (boil, drain, add milk, butter, and sour cream), chicken gravy from the packet, Asparagus (steamed), I took regular french bread, I buttered some of the bread and then only added the garlic to some, my husband thought it was only the garlic on the show, we both liked it with the butter added.. The recipe was a good start we are adding our own twist on it next time. Thanks

I made this and it was very good. However the next time I will cut the use of the olive oil in half before it goes into the oven. If you make this I would do it, as the chicken might be too oily if you don't.

40 cloves is not too many, believe me! At the end of the dish, we were actually hunting for more of them! This dish is incredibly easy to make - it practically cooks itself. The chicken was moist and tender, and the garlic great when mashed into potatoes, spread on bread, or eaten by themselves.

My husband and I seen this episode quite a few years ago; they seem to show it around Halloween. This is a classic roasted chicken recipe, with the added plus of loads of yummy roasted garlic along with it. Alton shows how you can just spread it on a piece of french bread afterwards, for the freshest garlic bread ever!! YUM!!

Oh my GOODNESS... my family are such garlic fiends, the toast was fantastic! The chicken was just right, and I added rosemary to the mix as well. I put a few tender sprigs in the oil- my family wound up eating them, too... they fried up nicely and were crispy and GOOD. We love Good Eats!

The first time I made this recipe, I followed the directions exactly. I found the recipe needed a few tweaks. Instead of fresh thyme, I liberally added dry thyme and reduced the oil by a 1/4 of a cup. Also, I found I did not need 1.5 hour of cooking time, but closer to 55 minutes. The recipe came out wonderful with the aforementioned adjustments.

I'm a vegetarian, and the prospect of all that sweet garlic made me consider a vegetarian version. Here it is: Use Quorn Roast, a turkey-like mycoprotein available in the frozen section. Place in warm water for 2 minutes, then remove from package. Place in a nonstick cast iron pot and pour the olive oil on and around it. Surround with garlic cloves, thyme, and small red potatoes. Season everything with salt and pepper and turn the Quorn roll to cover it with the oil and seasoning. Bake at 350, turning the roll 2 times during baking. Depending on the moisture and oil in the pot, you can go as low as 60 or as high as 90 minutes.

We loved this! The chicken was so flavorful and the garlic was perfect on the garlic toast. For our oven, we probably only needed about an hour baking time, though - the chicken was a little dry, but SO good!

This recipe is so tasty. It takes awhile to cook but it's worth it. And peeling 40 cloves of garlic takes way more then ten minutes. It says the difficulty is medium but i found it super easy. Well worth the hour and a half cooking time.

It 's still a great recipe after all the years I've been doing it. I use my homemade infused Rosemary oil, thyme, garlic, & S/P. I take advantage of all that garlic & oil - roasting my potatoes, right in there - Italian-style! of course, the bread & garlic!! I prepare 40 cloves and the Cx once a month. It works great in the crockpot, too!!!!

I usually hate roasted or grilled chicken. I used 3 boneless chicken breast and they came out moist and tasty. The house smelled delicious and my neighbor brought a jar to take the pan drippings and extra roasted garlic. My husband called this recipe a keeper!

Awesome recipe. I eighthed the chicken myself,it was a good experience but I think I'll have the butcher do it for me just for the sake of time. The garlic cloves were absolutely delicious out of the oven as was the chicken and the bread with garlic-oil spread on it. All and all it cost me about $8.11. Definately doing it again.

This is one of the easiest most delicious meals I've ever prepared. I used boneless chicken thighs and it was incredible. It takes no time to prepare and the 1.5 hour cook time leaves plenty of time to get all the sides together.

I can make a real mess in the kitchen when I'm cooking, especially with a new recipe.....you know just not judging the time correctly. THIS recipe is so easy, so easily paired with so much, and so yummy....too hard to mess up and too hard to just not keep things in line. I did find that I did not need the 1 1/2 hour time in the oven, more like 55 minutes. BUT still had that oven time to make some mashed potatoes and steamed asparagus as sides. The roasted garlic tasted wonderful with all of it! And my kitchen stayed clean!

The hardest part of this recipe is peeling the cloves the rest is a breeze and clean up is easy. the chicken comes out moist and very flavorful and the galic cloves are perfect to spread on bread. I highly recomend it and would suggest some kind of pasta as a side.

I would definitely recommend adding some fresh rosemary to the pot, to give a little more breadth of flavours to the dish. Also, substituting chicken stock for 1/2 the olive oil might make it a bit less oily. The BEST part was slicing up some crusty bread, drizzling the olive oil on top, broiling/toasting it, then spreading a clove of cooked garlic on the top. We LOVED that part.

I prepared the chicken like AB said to on the show, which included pouring 1 1/2 cups of Olive Oil on the chicken before putting it in the over. (At least, that's what I wrote down.) Made it a bit greasy, which is why it's a 3 star. I'll try it again this way, though!

This isn't a great recipe...but it's the start of what could possibly be a great recipe. It just seems that something is missing...some flavor component that would complement the garlic. I'd also recommend cutting up the chicken so that the flavors can infuse the meat better. As the recipe stands now, the chicken does not pick up much flavor.

I'm a garlic addict, and this reeeally satisfies, with lots of crusty Italian Bread, or Texas Toast, for spreading that buttery garlic all over. I usually make this with pre-peeled garlic cloves (a large jar from the produce section does the trick) and yields a terrific result. Another option is keeping the cloves in their paper, and then just squeeeezing a clove or two out for buttering purposes later.

While this recipe was simple, peeling the garlic is a pain in the butt. And if you are not going to make garlic toast out of this, then I highly recommend cutting back on the oil as there is just WAY too much here. The garlic cloves were fantastic though, and I combined them in some mashed potatoes for a perfect side dish. The chicken itself was moist but just lacked in flavor. I will be trying a different recipe next time, I think.

This recipe bosts a variety of flavors most of which is of course garlic. There is a great chicken flavor mixed with the garlic. The garlic toast made with the oil and oven roasted garlic was magnificant. Everyone should try this simple dish, it will be a keeper!!

I liked this recipe adn the degree of ease it had with it. The only complaint I have is that there was not a lot of flavor. I don't know if I did somethign wrong or what but the outside tasted great but once the skin was gone teh inside did not taste that good but as long as you ate everythign together it was good.

The Chicken was so moist. The Flavor of the garlic was infused in thechicken. You can use different variations on the herb used. I use fresh rosemary instead of thyme. It was Great.

This is a great recipe. I love the old-world simplicity of the dish, the quickness of preparation, and of course the finished product, which was totally amazing. The meat is moist and fall-apart tender, delicately infused with herby, garlicy goodness. The soft, sweet garlic cloves are a truly tasty bonus. We also made garlic bread with the leftover oil, garlic cloves and some Reggiano, just as Alton suggested on the show. Definitely a dish I will make repeatedly.

We made this for dinner a few times for just the four of us. I made it again when we had 50 people here for a party and it was a hit! I used legs, thighs and breasts. I browned them in 2 dutch ovens on the stovetop. Then, I put the browned chicken in a huge tin pan, poured on the olive oil, poured on the garlic cloves (got a big container of peeled cloves from Sams Club), and then placed sprigs of thyme and rosemary all around. I baked it, and then just reheated it the next day. It was ALL eaten - and I had a huge buffet of food. I have out the recipe several times that day!

40 Cloves and a Chicken is absolute bliss for the garlic lovers out there. The cloves are a sweet mellow version of themselves after being cooked for and hour and a half. They are delectable smashed onto a crusty sourdough bread and toasted for a few minutes. (Or even not toasted.) The chicken comes out so moist and tasty. We love this dish! Thanks Alton Brown!

I will never make roasted chicken any other way now that I have this recipe! I was a little hesitant to use so much garlic, but cooking it mellows it and my family was fighting over the roasted garlic cloves. We love Alton's recipes and my kids love to watch his show with me. I've made this recipe along with a similar recipe from his book "I'm Just Here for the Food" (great book!). The other recipe calls for garlic (not nearly as much), shallots, parsley and thyme. I also add rosemary. To peel the garlic, I just smash it with a chefs knife and pick the garlic out. It doesn't need to be whole for the recipe to work. This is a fantastic, easy, quick to prepare recipe; my kids and my husband LOVE it!

I normally dont eat chicken on the bone. There is something about it that just grosses me out. But when my hubby made this, I loved it. The chicken is so tender it falls right off the bone. and the fat just melts off. The garlic carmelizes and is so sweet. It really is the best chicken I've ever had. we make it at least once a month.

I have tried many of Alton's recipes in the past and have never been disappointed! This one was no exception. It was easy and so delicious. The only changes I made were, I only used 3 bulbs of garlic and about 1/4 cup of olive oil, plenty of salt & pepper and 1 tbs Mrs. Dash seasoning. My family LOVED it! Seemed like the chicken was a little dry...Reduce the amount of thyme and you will be fine...would suggest using basil instead. First time I cooked the recipe it did not turn out as good as it smelled. I will try again and not cook it as long and get rid of the thyme....

This is to die for! The garlic and olive oil in the chicken is just the best! I couldn't stop! I would judge your cooking time of the size of your chicken pieces, as mine did not need the 1 1/2 hours. I cooked for about 70 minutes. I then took the chicken out of the oil and garlic and mashed the devine garlic cloves in the olive oil with a bit of chicken stock. Use as a dip for french bread and you will be in heaven. Also good over mashed potatoes and the chicken. This will be a regular in my house!!

I've made this half a dozzen times for the family. The kids love the chicken and the adults fight over the garlic cloves that have been roasting in chicken fat and olive oil. Serve with some bread to spread the garlic on and to dip in the juice.

The chicken was falling-off-the-bone tender. The garlic smell wasn't off-putting like you would think it would be. The hardest part of this recipe is peeling the 40 cloves! Next time I might cut down on the oil a little bit, but other than that it was FANTASTIC!!!

This was super easy to make and tasted great! I cut the recipe down for two people with no problems, and with less chicken it only took around 45 minutes to cook. The roasted garlic smell is really strong, and it will linger for the rest of the night (which I think is a good thing).

This is absoluty heaven. We generally cook this on weekend because of the time is takes in the oven. When we decide to make it I spend the whole week salivating over it. The cloves of garlic are absolutely wonderful and there are rarely any leftovers.

This recipe is fantastic - couldn't be simpler! I'm a lazy cook as I just got a big package of boneless chicken didn't bother with the stove top but did Alton's turkey trick and cranked the oven for a half hour with the chicken uncovered for a little browning then added the garlic and rest of the oil and covered it -- yum, yum!!!!

We don't like dark meat chicken, so I used skinless, boneless chicken breasts (6). I sprinkled with salt and pepper and rubbed with olive oil, then browned them on both sides in a nonstick skillet that had a little olive oil in it. While it was browning I put 1/2 c of olive oil, thyme and rosemary in a baking dish. I added the chicken to the dish, spooned some of the oil and herbs over it then added 3.5 heads of peeled garlic cloves. Then I just covered it and baked for 90 mins. The chicken was moist and pretty from the browning; the garlic was soft and mild. I spooned the oil mixture over the chicken and spread a clove of garlic over each piece. I served it with mashed potatoes and spinach sauteed with fresh garlic and crushed red pepper in olive oil. Next time I will add a little more herbs and garlic and probably some crushed red pepper, but We all loved this!!
