Here are my suggestions to make it sooooo much better...use red potatoes w/skin on. No need to bake a potato separately. Boil and cook the potatoes, onions and add 1 or 2 cloves of garlic and bouquet garni to the chicken broth. (You will need to up the amount of chicken broth.) After this is done cooking, mash potatoes (don't worry about getting all the lumps out). Add cream, sour cream, scallions (use all of the green onion) and bacon. Heat through. Add salt, pepper and nutmeg to taste. Serve and sprinkle more bacon bits and shredded cheese on top. I added some grated chedder cheese and 1 tsp of flour. It was very good. If you want a hearty and filling creamy soup this is an excellent choice. Then, I mashed them w/ a potato masher, added cheese and cream and was done. I've served it numerous times this way and everyone loved it. It smelled kinda weird for about the first hour & half, then mellowed out by the 2hr mark, TASTES reallly goood.
