This mayo is delicious. True, Hellman's is pretty close. However, the homemade stuff tastes so much fresher and elegant. You get a nice little zip of lemon. It's wonderful. I don't think I would make this every week, but definitely if I needed a cup of mayo for a potato salad or something. Or to impress the in-laws.




Worth building up those whisking muscles!

And even better if you get all experimental with the oil. I used 1/4 toasted sesame oil. Gave it a real nice flavor.

This seems like an awful lot of vinegar/lemon. The first time I made this it was fine. The second time it seemed like all I could taste was tang. I think next I will cut it in half.

This gives a pretty good mayonnaise, but I agree with other reviewers that the recipe has far too much vinegar. I used 1 tsp of vinegar and 4 tsp of lemon juice, and it came out just right. Adding half the lemon juice/vinegar at the beginning and half midway through gives you a good chance to taste and correct the flavor mid-way though. Just make sure that you have 5 tsp of vinegar and citrus juice total, and it should set. Any more or less, and it will be soupy. Also, I used a hand mixer. My first attempt with a wisk didn't set.

Best mayonnaise I've ever eaten. I used the safflower oil. It was a bit hard on the arm having to whisk by hand, but it was worth it. Now I need a food processor and some home grown tomatoes!

This is a fantastic recipe. It's incredibly flexible, too... add some wasabi powder, or olive oil, or chili oil, or really anything to experiment with the flavor! We still buy jarred mayonnaise from time to time, but I always make homemade when it matters!

I followed the directions very closely, and the consistency was fine, everything looked good, until I was completed and tasted it. It tastes like corn oil. I'm not sure why this type of oil would be suggested since it has a distinct flavor that was awful. Threw it all out, therefore the 1 star.

I cannot tell you how excited & thrilled I am to be able to whip up my own, FRESH, mayo dressing! I cannot believe how easy it is. I can't wait to explore different flavors/spices with this recipe. I've been on this kick of not buying processed salad dressings & just making my own. To all you people like me, there are some wonderful, EASY, dressings that you can make, that you know don't have some sort of chemical preservative in it. Now that I know how to make homemade mayo dressing - well that just makes my dressing horizons much bigger & for sure more healthy! That being said, I did cut back on the salt by one half because it's my experience that it's always easier to add spices than to take away and my pallet likes this receipe using half the salt, but that's just my taste. Other than that, I followed the recipe exactly as outlined. Oh and one other note, definitely pour the oil in small doses until you get to the end...Enjoy! I have wanted to be empowered to make my own mayo when I was out of store bought. this recipe has given me that empowerment. I was TOTALLY stunned that I got resounding success the VERY first time I tried it! One word of caution: DON'T do what i did, and increase the salt. the acids provide the remaining salt needed, other than the half teaspoon called for in the recipe. Only reason I didn't give it all 5 stars, is the white vinegar made the mayo a little strident tasting. I'm going to use all lemon juice the next time, and try rice wine vinegar after that. THANKS ALTON-YOU'RE THE BEST!!

Well, I feared the whisking involved in making this but I went ahead and tried it anyway; really it was not as much work as I thought and the mayo is great! This is a keeper! Better than store-bought and inexpensive to make. I was surprised at the amount this yielded.

being of the younger set, i didn't even know you could make mayo!! (and i thought there was milk in it, but that's another story!) This was GREAT - sore arm, but well worth it! It is toally different than Best Foods - i can't wait to use it for my famous macaroni salad!

As he said on the show....I don't think I'll ever use jarred mayo again!! I was tempted to use the food processor method - but I wanted to see just how difficult it was to do manually. I'm so glad I did. I think it "meant more" to me - LOL - and only one bowl to clean up!! Beats cleaning a food processor. And it really didn't take long at all. I added a little chili oil at the end for a kick and used it as a base on fresh snapper filets before coating them with a pecan/panko crust and pan frying. The lemon/vinegar in the mayo was a perfect compliment to the lemon cream sauce I made to serve on top - YUMMY!!!!!!!!!!

I suspect an electric stand mixer would work better than the food processor I used. A lot of oil flies off, clings to the side, then drips back into the finished product for an oily mayonnaise. Still, if you get past the oil, it's actually very good. I added 1/4 tsp of Cream of Tartar to add to the tang, as well as being a little liberal with the lemon juice. All and all a good base and worth knowing. A piece of advice, though; consider starting it /by hand/ then slowly adding the drip. It should help keep oil from flying off to start with something thicker than water.

(witty title, no? Ha!) Anyway, I just made this and now that feeling has returned to my hand and arm, I'll type out a little review. This mayo is perfect except a tad too much salt for taste. Will try bumping a little salt out of the 1/2 tsp measure and see if it helps next time. Thanks Alton!

This a great mayo recipe. I have tried many but this tastes wonderful and goes together quickly..... I was trying to avoid commercial mayo made with industrial soybean oil which is why I was looking for a homeade recipe. I used light olive oil and it was very, very, good.

Really good...I think I was overzealous/overcautious with the oil because it took me longer but it was worth it. I dont think I will be buying mayo at the store anymore! I made a chicken salad with this and my mom was over and ate some...its her recipe and she asked what I did because it was the best it had ever tasted. Hooray for homemade mayo! Thanks for another great recipe!

Save yourself time, sore wrists, and wasted ingredients and just make Party Mayonnaise instead (other recipe from this show). It comes out every time, and you can even make an aioli with it (just add garlic). Trust me, the extra dishes you will have to wash from the food processor (or blender) parts are nothing compared to the frustration and time you will spend with this one.

I use this mayo recipe for all my mayonnaise anymore... no store-bought stuff. Quick and easy and lasts long enough that I can fill a large "Hellman's" jar up with Alton's stuff and I never have had any go bad. This guy rocks.

Love this recipe...cheated w/an electric mixer (one of my kids jumped on my hand during a wrestling pile-up...I lost miserably :) but followed the technique and it came out wonderfully. I've even been able to convert my husband from being a Miracle Whip junkie. Goes really well with chipotle pepper powder or horseradish for steaks. Still playing.

Wow! I can't believe I did it! I actually made homemade mayo! What I thought was impossible really wasn't. There's a little too much lemon in this for my taste but next time I will just add a teaspoon more vinegar to balance the flavor. It was so easy and only took me 10 minutes to whip up, from start to finish. It also helps to see the mayo episode but this recipe is just as easy to follow online.

This mayo was great, but only marginally better than Best Foods/Hellman's mayo. I don't think the work was worth the slight taste difference, though if you were using an unusual oil, etc it might. It is nicew to know that I can make my own may very easily if I'm out of the jar variety.

So easy to do, hard to make a mistake and even then its correctable and try turns to boost flavor... red pepper vinegar or oil, basil rice vinegar, garlic oil....
