When I buy the buttermilk, I measure it out and freeze it so it is easier to have on hand when I want to bake. I found that I needed to put a tent of foil over the load during the last 20 (or so)to keep the top from getting overly dark. What works for me is to portion the loaf into 12 sevings and then cut each serving into 4 pieces before freezing it. That way, fter defrosting the single portion, I'm less inclined to eat this delicious bread more slowly - enjoying each bite!
