My Mom's old stand-by turkey and giblet/bread stuffing is always excellent, but occasionally a little on the dry side. We decided to make our Christmas (or Kwanza or Hanukkah) Turkey this past weekend using this recipe, just to try something a little different. The resulting turkey was moist, but flavor of the turkey meat wasn't all that much different. The problem was that we ended up with about 3 gallons of liquid in our roasting pan, likely due to the effect of the basting broth liquids coupled with the juice from the oranges + carrots + celery + onions that were stuffed in the bird. Thus, while the meat was moister, there was so much juice left over, that the typical turkey drippings gravy that we normally make after the bird is done was kind of not possible to make. We ended up with some thickened kind of turkey broth soup with a fruity orange abckground flavor instead of typical turkey drippings style gravy. It was all edible and was not a bad deal overall, just really a bit overrated at 5 stars by the other voters here. In spite of these comments, it is true that Emeril has taught us some excellent cooking ideas on his two popular shows.

Can't believe how FABULOUS this turkey is! I have to admit, I didn't do the complete recipe, just brined the turkey, stuffed it w/onions, oranges and rosemary, rubbed butter and seasoning on it, and roasted it without basting...and it was unbelievable! Even my turkey soup that I made with the leftovers was amazing, not the usual bland stuff...I will never do turkey another way, ever!!

I had never cooked a turkey before this one. Last year I followed this recipe and stunned my family! My husband said it was the most delicious and moist turkey he ever tasted. Just want to let you know I never do the cooking in my house. Usually my husband does it but I saw how delisious the turkey looked on tv and wanted to try it and my husband would not make it for me so I made it myself. Oh my goodnesss, even my husband who does not like white meat ate the whole breast. I was upset because usually I eat the left over white meat for leftovers but this year there was none! I hope you enjoy this turkey as much as I did. The only problem I had was turning the bird over after the first hour of cooking it in the oven it was heavy and hot and a little skin peeled off and at that point I was unsure of how it was going to come out but to my amazement it was DELICIOUS!!!!!1

At the beginning of the recipe it talks about ingredients for the brine. Then in directions you don't use the all ingredients listed in the brine. It should be more clear. Do you use the orange, thyme and stock for the brine? Please review and let me know if you can.

This by far is the best turkey recipe I have ever used. Anyone who uses this recipe and doesn't get the most delicious turkey they have ever had every time either does not know how to follow a recipe or is not using the ingredients that the recipe calls for. I did a smaller dinner and used turkey breast instead of a whole, just to test it out. Oh my goodness, it was so good and so moist my family wanted more. But don't take my word for it try it yourself and see. And even if you don't, you ain't hurtin' my feelins, we tried it an love it now my friends are cooking it for their families for Christmas dinner so this recipie has gone from california to Main with just my friends and family. I used the brine recipe and method and it produced the most succulent and flavorful turkey EVER! I followed the brine recipe exactly, then put an herb butter (softened butter, garlic, sage, rosemary) underneath the breast skin and a little rubbed on the outside. My mom, who has been the long standing ruler of the Thanksgiving turkey preparation, was skeptical of me soaking the bird in brine, but the result turned the entire family into believers of the brine. Fantastic, this IS the new standard for our family.

While I have always loved Thanksgiving, eating the turkey was always a dicey situation. either the meat was too dry or it wold be underdone in an effort to keep it moist.Brining the turkey, changed all that...a perfect turkey moist and delicious. I will never cook a turkey any other way.

My dad and my brother were the ones that told me that a brined turkey is the way to go and suggested this recipe. My husband and I had never made our own turkey before and were very nervous. Although this recipe was alot of work...it was definitely worth it. This was hands down one of the best turkeys we have ever had! We couldn't believe how beautiful it looked when we took it out, and it was sooo juicy and flavorful! I roasted my first turkey (believe it or not) for the holiday this year. I altered Emeril's recipe somewhat (added poultry seasoning, white wine and olive oil instead of butter to the brine & omitted the oranges.) I let the bird (12 pounder) soak in the fridge for 2 days, turning each morning & evening when I came in from work. Also, was reluctant to put in oven "bare" so I opted for a Reynolds Oven Bag instead. It was the ABSOLUTE best turkey I have ever had in my life..all of my guests raved! They couldn't believe I had never made a turkey before. Even more moist than my husbands fried turkey. This roasted turkey went BEFORE the super moist fried turkey he makes!! I LOVE you Emeril...thanks!

I made this recipe with a fresh turkey for Thanksgiving. It was without a doubt the best turkey my guests and I have ever had. It was incredibly easy and there was no need to even season the skin. I stuffed mine with a bread stuffing and poured some olive oil over the top. Wonderful! I also didn't have oranges so I just used some orange juice. I will never prepare turkey any other way!!!

I live in Belgium and treated my new family to their first Thanksgiving this year! For all that do not know it Belgium is called 'The Stomach of Europe' that is because the food is so very good here.. Anyway! My turkey looked like a magazine cover! Very juicy, had great flavor, blew my husband away and even the white meat was moist. I had some trouble with the gravy, but that could just be me. When I remake this, I'll probably alter the gravy, but other than that its worth all the extra work!

It was my first Thanksgiving, and my mother-in-law was coming... It turned out PERFECT! Excellent turkey recipe. This has to be the most flavorful turkey recipe I have ever tasted. I cooked it for thanksgiving and it was a hit. Years ago, I began cooking my turkeys following Martha's recipe of cheesecloth-basted-breasts using wine and butter. They always turned out moist and delicious. However, this was by far the easiest recipe to prepare & cook I've ever used. Never have I had such moist, flavorful turkey gracing my Thanksgiving table! My family loved it as well. Make sure to print the recipe and take time planning; it can get confusing. Directions could use some definate rearranging. Thanks, Emeril, you win!!! I'll think of you every Thanksgiving!

I made my first turkey this Thanksgiving. I found out the night before that I would be making one of the two turkeys for Thanksgiving. EEEEK!! I pulled this recipe off the website and was able to pull it all together quickly. I used a lobster pot with a clean trash bag to soak it in the brine overnight. It was SO tasty and easy. Thank you Emeril for helping to make my first turkey a huge success!

My husband was away on tour with his band over Thanksgiving so I thought that this recipe would be perfect for just the two of us later on (it only calls for a 10 lb bird). The turkey turned out wonderfully. The breast didn't dry out and was perfectly browned with a beautiful glaze! The meat was moist and so flavorful as well. The best part was that it was so easy to make! I loved the stuffinf as well, never making Oyster Dressing Before

This turkey was incredible! It was also the most atttractive turkey I have ever made. It came out so beautiful and brown, I have never had a "picture-perfect" turkey, but this one was! The gravy was wonderful as well! It was a tiny bit salty but when you poured it over mashed potatoes or the turkey the salty taste blended in. This was SOOOOOOO easy and SOOOOOOOOOO good! Love it, Love it, Love it!

I have made this turkey in brine three times now. It is moist every time. I always use a larger turkey than the recipe calls for but one recipe brine is enough. I soak it in a large stock pot in the refrigerator. I have used a cooler instead of the fridge before too.

Forget about frying turkeys and use this wonderful recipe for brined and roasted turkey! Emeril has simply outdone himself this time. Everyone at our Thanksgiving feast agreed it was by far the best turkey anyone had ever eaten. This would make you want to roast a turkey every month! We didn't even have leftovers... a first for our family. You will need to invest in a nice, new 5 gallon pickle bucket and move the shelves around in your refrigerator to accommodate it (or place it outside if the weather is cold enough).

Like several other reviewers, I did not follow the entire recipe- I only used the brine. I even changed that a little- I didn't use the orange and I added in fresh sage. It added amazing flavor- it was the first time I have ever eaten turkey that was not bland. I stuffed it with more fresh sage, thyme, rosemary, lemon, onion and garlic and rubbed butter on the outside then stuck it in my rotisserie and walked away. It was that easy and that so very, very good. Everyone raved. This is the first year we didn't throw any turkey left-overs away! I give Emeril total credit for the right portions on the brining fluid. I can't wait to try it on a chicken.

This is an excellent recipe....and if I say so myself....our turkey turned out to be the best I had ever tasted. It was amazingly juicy and tender. The bird did look in need of a foil covering midway to keep the skin from getting too brown and we basted it with the turkey stock every half hour. We pleased all our family. It was the first time for me and my husband!!

This was the first time I have brined a turkey. Did it 24 hours in a super heavy weight lawn and leaf bag as I had no other container large enough. In order to keep the turkey surrounded by the brine, I put the bagged bird inside a square cardboard box then put it in the fridge. I also made my own turkey stock a couple days ahead. When making the turkey broth, I used all (6 cups) turkey stock instead of 3 cups stock and 3 cups water. It made the gravy very flavorful. When we tasted the bird, everybody absolutely loved it. I will definitely use this recipe again, and will even try something similar for roasting a chicken. Rave reviews to you, Emeril!!!

I totally agree with every positive review made on this recipe! And my guests do too! Although it is extremely difficult to brine a turkey in something, I figured out that if I put it in a trash bag and then sat it in a large cooler (shape doesn't matter) I could put it in the garage, as stated in another review, and had about 4 cubic feet of extra space in the fridge! I will use this recipe again next year! Including the gravy! ! ! Makes me wish every day was Thanksgiving! And I am sooo thankful for this recipe!

If you have never brined a turkey don't wait any longer. It's easy to do and my whole family, from Grandmom down to finicky grandchildren, loved this turkey. Everyone agreed it was the best turkey we have ever had. This recipe turned out a very flavorful bird. The only difference with what I did is to cook it in an oiled brown paper bag for 3 hours (1st hour at 500 F, 2nd hour at 400 F and last hour at 300 F).

I was in charge of the turkey and dressing (not stuffed) and I selected this reciped because I heard brining tenderizes the meat. I used doubled bag garbage bags ( easier than finding a large size pot) for a 18lb bird and it's easy to do and I let it sit overnight in the refrigerator. I had about 8 cups of stock ( from roasting the bird) to use for stuffing. The turkey cooks faster since it's brined, I'd watch your oven temp. Mine was done in 4hrs. @170 degrees mine temp floated between 325 & 350 degrees. The gravy recipe with the wine was good too...you need to add a lot more flour than 4 tblsp.

...but it was one ugly roast turkey. The breast was flattened during the first part of roasting, and the skin of the whole breast and one drumstick stuck to the bottom of the pan when it was time to turn the turkey. Recalling an old trick, I made a "faux skin" by soaking a few layers of cheesecloth in the drippings. I covered the bared breast meat with it, and continued basting during roasting as the recipe directed. It worked, and the turkey was delicious and very moist, but it was carved in the kitchen, not at the table. A gorgeous, golden brown bird was not in my cards for this Thanksgiving. I'm not sure I'll go through the trouble again of stuffing it with the oranges and such. I will use the excellent brine recipe again, for sure. Better luck with the aesthetics next time, I hope, when I protect the upside down breast with a piece of parchment in the pan...

What can I say that hasn't already been said. This is my second year of making this turkey. My husband had to use paper towels at the edge of the cutting board so the juices wouldn't run down the cabinets! And, that's after resting the bird 20-30 minutes. Wonderful seems redundant in this case but wonderful it is! The "oohs and ahhs" are fabulous too.

I just made this for the first time today, and my family LOVED it. The turkey was moist beyond belief, and the gravy was phenomenal. I did two things differently; first I air dried the turkey overnight on a rack in a roasting dish in the fridge (this yielded crispy, browned to perfection skin), and second is that I roasted the bird breast side down for 3/4 of the cooking process and flipped it over for the last hour or so. I roasted it uncovered for 1 hour and tented it with aluminum foil.

But this recipe really came to the rescue and I will be sure to use it again for both turkeys and chickens. This year I decided to go above and beyond and make Thanksgiving for my family of 7. I brined this turkey overnight and cooked it for 6 hours the next day (it was a big one!), basting it every 20-30 minutes. I didn't have all the EXACT ingredients but it turned out AMAZING. I followed the general directions and let me tell you, the smell of it cooking was mouth-watering. I haven't eaten meat regularly for 3 years and even I was finding it irresistible! For someone who is vegetarian or never made a turkey before (like me!), this recipe is perfect - the end result seems like you put it a lot more effort than you really had to. My family raved about how juicy and flavorful it was. I highly recommend this recipe for anyone who's attempting to impress the relatives! Oh, and the citrus in the brine and during the cooking was such a wonderful accent!!

I have never brined a turkey before and wanted the very best tasting turkey for my family for Thanksgiving. All of my turkey dinners over the years have been fantastic, but I wanted this year's to be the best since two of my family members survived tragic accidents... something to be grateful for to say the least. I decided on this recipe and followed it exactly as directed. It was quite a feat since I had a 22 pound turkey, but I did it. The final result was a dryer than usual turkey that leached out more juice than it should have and had no better taste than those of year's past... and after all that work! My advice is never try this recipe and celebrate life and Thanksgiving for all the good reasons. THIS RECIPE WAS NOT ONE OF THEM!

This was my first turkey, not because I do not love to cook but because I am fortunate to have a mother and mother-in-law that are amazing cooks and still host the holidays. This recipe could not be easier. I skipped the broth part and the turkey still came out moist. For the first time I used a temp prob and so gald I did. Only problem I had was in spots the turkey seemed really salty. Next time I will use a little less salt. I also added a few sprigs of sage when roasting.

Before this recipe, I had prepared my turkey with one of those over bags for 3 years, turned out ok...but after I saw this episode of Emeril Live last year a little before Thanksgiving, I decided to give it a try, even though I never roasted anything before. WOW! Everyone was blown away, it was super moist, full of flavor, but not over powering it (Still tasted like a turkey). I am using this recipe again this year. This is an excellent recipe with one huge exception. The Temperature of 165 degrees is just too low. This turnkey should be roasted to 182-185. Against my better judgment, I took it out at 165. It had cooked at 325 for 4 hours, not the 3 hours suggested in the recipe. It was undercooked to the extent we could use only the white meat. Food Netowkr,lease, please change this recipt to read a higher temperature!

My family has always roasted Turkeys and last year, I tried this recipe. It was so moist & delicious! I will use it everytime I make turkey. This year, I found sealing "brine bags" at Williams Sonoma and I think they will help ease the brining process. I actually put the turkey in a cooler overnight in the brine bag with ice surrounding it. Enjoy your Turkey Day!

We followed this recipe in preparation of our first thanksgiving turkey two years ago. The taste was great!! We received rave reviews from the veteran cooks at our dinner. The only thing bringing it down from 5 stars was the massive prep required for the brining...not that it is difficult, just a bit of a juggle to refridgerate a giant turkey tank at the same time the fridge is full of all the other Thanksgiving food. At the same time, what is a good container to brine a turkey in? Still looking for that, but following this recipe again this year and looking forward to a great dinner!
