I have made this recipe twice now (two Thanksgivings in a row) and they always turn out wonderful. I think the key is that he has you toast the pecans first prior to making the pralines and also adds bourbon which gives it a little background zing.

I followed the directions exactly. My pralines did not set, not even over night. As gentle and careful as I tried, they crumbled when I tried to pull of the paper. They also don't taste as I expected. My mother used to make New Orleans pralines and I think I much prefer those flavors.

this recipe is wonderful, easy to make. and makes the best tasting pralines i've ever had.
