I made using pecans instead of cashews (I had them on had the first time and everyone loved it so much, I haven't had the heart to change it). I also use 100% pure maple syrup as I'm not fond of the cloying "pancake syrup" types. I've even found that the slow baking perks up slightly stale coconut or nuts (and I would guess the oats, too), so it's a great way to use up items nearing the end of their shelf-life. My husband adds dried fruits and M&Ms for gorp. My kids love it on fruit and ice cream. Me? I love it with milk in a bowl...or straight out of the container. There is no end to it's uses! I have now made this recipe many times over the last few months. I would say that you have to like garonla to reaaly enjoy this recipe. I have mixed and matched different nuts to get the right combination that I like. I found that the best mix for me and my friends is just the almonds, oats, and rasins. I don't care much for coconut. My friends enjoy it when it first comes out of the oven. It will make your kitchen smell great. I eat mine with milk in the morning as ceral. The ingredients can easily be changed and substitued for others for variety or just my families individual taste. I used honey instead of maple syrup and it worked just fine; I also added dried fruit into the mix when cooking was done. I actually take this granola and mix it in with Alton's steel cut oatmeal recipe in the mornings for an awesome oatmeal with an unbelievable added crunch. Warning! So you know it must be great tasting.:) To get more chunks, I spread and pressed down the granola into a foil lined sheet pan when it came out of the oven. Then just peeled off the foil and broke the cooled granola into pieces. I also added dried cranberries and left out the cashews. I plan to try adding more dried fruits or nuts for a little variety. Yummy yummy, want more clumps though 06/21/2006 at 01:10pm User: Teresa from South Orange, NJ User Rating: i've made this recipe three times now and have been really pleased. i followed a previous reviewers suggestion and increased the recipe by 1/3 to make the measurements easier. i'd read previous reviews though about it being clumpless and wanting more of an out-of-hand granola, i've tried a few additions to get it to clump more. first, i tried whipped egg whites. no clumps. next, i added 1 cup of hot water. i got some clumps, but it took forever to cook. today, i decided to try a more mechanical approach and that seems to be the most effective so far. i crowded it a bit more in the sheet pan and then used wax paper to smash it down. i tried to limit the stirring and mashed it back down after each stirring. the result was much more clumpy. also, i added 1/2 cup of flax seed meal and omitted the fruit. definitely a household favorite already. I also used melted butter instead of oil after reading another review that suggested this might make the granola last longer. I keep mine in a ziplock bag and it has stayed fresh and crunchy for a week now. We gave this as a Christmas gift to my daughter's kindergarten teacher and she couldn't stop eating it! I will say that you should check the mixture at 45 minutes to see how far along it is. My oven runs hot so the first batch I made I cooked for 1 1/4 hours and it had a slight burned flavor even though the color was fine. The next batch I cooked for 50 minutes and that was perfect! I made the recipe verbatim except I omitted the raisins -- I love raisins but just wasn't in the mood for a chewy component to the otherwise crunchy goodness. I use melted butter because it doesn't go rancid the way polyunsaturated oils do. With the brown sugar/maple syrup, it has a nice round toasty flavor. I also use cranberries instead of raisins and sometimes replacing the cashews with more almonds. My picky 2 and 4 year old loves this! They munch on this for a snack and I don't feel guilty.
