They come out perfect every time--every single time!! Make sure to sift the flour first, though, especially if you're not confident that your blender can get rid of the smaller chunks of flour in only 7-10 seconds. EASY!!! It is also easier to work with, as the crepes are not as prone to tearing when they are turned. I made the recipe exactly as given and can't see that it could possibly be improved upon. It makes a nice light crepe that is very tender. The blender method works great and makes the process so much easier. I use an inexpensive French crepe pan that is available from gourmet kitchen stores. If you are going to make them very often, it makes things a lot easier to have the right pan. I have made them exactly 'by the book' and also with a whisk and not waiting the hour suggested (using the sweet variation without the liqueur both times). I am not easily impressed however I was with this recipe. I filled them with cooked bananas, brown sugar, cinnamon, and butter. One batter I used 4 hours after making it. The other I refrigerated overnight and used the following day. The same day batter worked out well, though some tearing occured. The next day batter had NO tearing. I used a 10 inch nonstick crepe pan over medium heat and spooned in 1/4 cup of batter for each crepe. One batch of batter made 9 crepes. I didn't see the show, so I had to figure out how to flip the things on my own! I wiggled the crepe out of the pan until about 1/4 of it was hanging out. Then I used a flat icing spreader to pick it up. With it hanging on the spreader, I gently layed it back in the pan onto the uncooked side. Very, very easy! Fillings I tried were a mixture of softened cream cheese, powdered sugar and mascarpone cheese with either blueberries (my fav!), raspberries or strawberries. After rolling them up I warmed them in the pan once more and topped them off with powdered sugar, whipped cream and more fresh berries. Love this recipe! I only make the sweet version of this recipe. I enjoy mine with cinammon-sugar and nutella (warning: very sweet), while my wife enjoy hers with apple sauce and cinnamon-sugar. Any combination of fruit and your favorite dessert topping would be good. Make sure you use a nice non-stick pan for easy flipping (for a challenge try to flip without any utensils, just the flick of your wrist). I spent 2 years in France - these are NOT how thick they're supposed to be. Maybe not so much flour?
