these are great for parties, like office parties. people can walk around with one in each hand. try substituting Phyllo for the crepe, works well.

I've made my own version of these on several occasions, including as a brunch special at work. They are a hit and combine my 2 favorite cooking methods: crepes and making recipes with crepes.

This is an excellent recipe. The substitution of crepes for a regular crust is interesting and tasty one. My only complaint is that if you don't have the crepes on-the-ready, this recipe can take a while. In the interest of full disclosure though, I was starving when I made the decision to make these so every minute seemed like forever. I recommend giving it a shot. Good Eats!

Is this correct for 12 oz of milk? Have made many quiches and this seems disproportionate to me - Would like to make them for my French class. Love the idea of crepes and quiche and LOVE Alton. Har to believe HIS quantities are off. Thanks

I was intrigued by this recipe. The crepes add to the taste and texture of the quiche.When I tried the recipe it was excellent. The muffin tin cups make the quiches simple and easy to handle; and what I like the best is that I can make the crepes ahead of time to minimize bake time on the quiche. I like the quiche to be flufffy and fresh. A good time is to be had by all.

It was good with a whole bunch of cheese...the only thing that disagreed with me is that, the crust was sweet and the eggs weren't.
