I was a little nervous when I made this cake and the cranberries took up more than half the volume of the 9-inch pan, but it turned out great! I had four desserts at Chrismas dinner and this recieved the ravest reviews!

A new holiday MUST HAVE!

When I made this recipe for the holidys I was absolutely floored by the look of it. I wondered if it could be as delicious as it was beuatiful. IT WAS! I was worried that the cake portion seemed so scant, but it baked up to a perfect height. It was very difficult for me to find the red currant jelly, but I finally found it at Albertsons supermarket. The orange flavor of the cake with the cranberries was delicious and it was a HUGE hit with everyone! I will be putting this in my permanent holidays menu for years to come. ABSOLUTELY INCREDIBLE!

Whole Lotta Cranberry Not Enough Cake

My family and I always enjoy all things cranberry, so I was excited to try this. For a 9" pan, as recommended by the recipe, a pound of cranberries seemed to be excessive. And yes,I did measure my pan. The flavors were wonderful. The cranberries' softened tartness by the sugar, the orange essence throughout the cake, and the currant glaze all were delicious. However, the cranberries were overpowering. MY SUGGESTION: Double the batter recipe and halve the amount of cranberries and use a springform pan. That way, you'll get some more cake to offset all the cranberries. I'll give it another try.

Not all my fault...

Ok, so I goofed in the making of this but it would not effect the overall tartness of this recipe. I accidentally doubled the milk which made for a lighter batter so the berries floated instead of staying on the bottom. It just made a lighter cake. It was just too tart. I made this for Christmas Eve and everyone said it was sour.

Now keep in mind, I've never worked with fresh cranberries before, but Giant Eagle was out of frozen. I washed and picked over the fresh ones, per the package instructions. They were are hard as bullets; perhaps this is why my cake turned out lousy? I followed Sara's recipe closely, with the exception of topping the berries with an extra quarter cup of sugar, since I'm not crazy about overly tart foods. The cake was gorgeous when I flipped it onto the serving plate. I brushed it with currant jelly, and stuck my beaters in the freezer in preparation for whipping the cream. It looked stunning with the cloud of whipped cream on top. This cake was so horrifically sour, if someone served this to you in their home, your first thought might be: does the host have anything to gain from your death? My first instinct was to trash the whole thing, but Hubby insisted on trying it. (He eats dried cranberries by the handfuls.) Even he looked as if he might be sick, and he wasn't able to swallow a whole bite either. I'd never try this recipe again.

Perfect after a heavy holiday meal

This is an exceptionally easy dessert and makes a lovely presentation. I garnished mine with orange slices and served with sweetened whipped cream. It's perfectly sweet and tart, which makes a small slice of it the perfect end to a heavy holiday meal. Do try to glaze with the current jelly, because it really gives it a nice finish.

Easy and tasty

I served this at a holiday party and it was raved about. Not only was it very elegant looking, it was delicious and easy to make. I would not reccomend this for children, the cranberries tend to be a bit tart, more for the adult palate. I plan on adding this to every holiday table from now on!!! Thank you Sara!!!

I have another recipe for cranberry cake, I came across this one and wanted to try it. Very moist and has the right amount of sweet to tart taste. My family can't wait for another one!

I made a few of these last year, and just made my first this year. I love it. It is a tart-sweet dessert. I did find with my oven the baking time was not long enough. But that is easy to test for and adjust.

I made the recipe exactly as called for. Nobody at Thanksgiving liked it much. It was way too tart and we are not a family that likes things too sweet which is why I thought I would like this recipe. It looked beautiful but the taste was tart and blah.

Not only was this recipe easy, but it came out looking just as beautiful as in the photo. Oh, did I mention that there was still apple and pumpkin pie left on the table when the Cranberry Up-side Down Cake was all finished. The perfect combination of tart and sweet.

This cake was easy to make, looked beautiful, and was delicious as well, tart and not too sweet. Everyone at our dinner party requested and left with a copy of the recipe. This is going to become a staple dessert at our house.

This simple enough to whip up for the family yet elegant enough to serve guests. I don't always brush over the jam at the end and it is just as good! Enjoy! Thank you Sara!

Different and GOOD!

This cake is very simple to make and the results are impressive. For the orange peel decoration; I first cut the shape, then tried to lay it flat. It would not stay that way, so I boiled it in water for about 5 minutes, let it cool a bit, and was able to lay it flat on the cake. It looked so pretty! This will definitely become a favorite for Thanksgiving or Christmas (or any other time!)

It's just perfect. Nothing more can be said about this one. I buy 12 - 15 packages of cranberries in November and freeze them so I can have this cake all year long.

After reading some of the reviews I wasn't quite sure I still wanted to make the cake, thought it might be to sour. It wasn't, I followed the recipe and it turned out wonderful. It was a hit at our house.

Not too tart, perfect as is

Used a little less than 16 oz of cranberries since a bag is 12 oz and I only had a little bit more, kept everything else as directed and it was good. Jelly makes the presentation but I didn't even serve whipped cream and it wasn't too tart

Delicious!

I was looking for a new cranberry dessert for Christmas and found this recipe. I was a little hesitant to make this cake after reading a few reviews that said it was too tart. I decided to try it anyway and it was a big hit! The current jelly made a big difference as it's sweetness balanced the tartness of the cranberries.
