The fresh rosemary really is what makes this and the whole preparation is key....while i made this my mother kept suggesting i not follow the recipe....so glad i didn't listen! I had a hard time finding the right cut of meat, I had the butcher cut a sirloin tip roast for me, it was actually cheaper than some more tougher cuts of meat like eye of round. My mother likes her yorkshires better though. My friends loved their meal, there was nothing left! The meat & potatoes were delicious but the gravy was a tad on the sweet side (I used a "robust" Cabernet). The Yorkshire pudding was...not to my liking. They tasted too much like egg and the texture felt as if they were undercooked (although I went over the 15-20 min). I think the amount of oil called for in the recipe is too much. Also, my mother-in-law, who is a Brit, insists that beef drippings should be used. It gets hotter which is the key to good Yorkshire Pudding. And I got to say "ha ha ha, I told you so!" My roast was a beautiful medium rare. The gravy was awesome, and I don't usually eat gravy at all. And the Yorkshire pudding was mmmm-mmmmm-good too. Although, I do take some of the credit, as my timing of all the meal components came together quite nicely! ;- ) Excellent flavors on Roast Beef BUT... 01/28/2006 at 03:43pm User: Naoko from Mountain View, CA User Rating: Loved the roast beef flavor, skipped the Yorkshire Pudding, and DID NOT like the red-wine reduction gravy...we may have used the wrong wine, it came out too bitter/sour...regardless, we'd use this recipe again for the ROAST BEEF and make a standard gravy (if you want gravy). Highly recommend the ROAST BEEF!!!! (my first challenge to do so and it was easy & delicious...quite proud of it!!) Use half milk and half water, with plain, not self raising flour, and have the oven as hot as it will go. It is most important that you use the beef dripping fat in your tins, NEVER cooking oil. I know, I'm a Yorkshireman who has been making these for more years than I can remember.
