I liked it alot. A little salty for my taste as is. That's easy to remedy though. The given cook times weren't accurate for my oven. Again, easily remedied. I put extra parmesan on the top and broiled it as if I was making Parmesan crisps. It gave it a very good crunch on the top.

This just didn't do it for me. I found the marinade overpowering and the eggplant itself just didn't seem 'done' enough.

For anyone who has a little gardening space try the Casper or Applegreen eggplant. They are tiny - about 4" long and even after cooked and stored are nice and crispy. Also no need to purge with these eggplants.

I tried this recipe hoping to get a healthy diet option. It turned out it was too salty. I cant say I didnt wash off and squeeze off the salt used for purging but for some reason it still had too much salty taste to it.

These were extremely flavorful. Very tender and tasty. A great sustitute for meat in a main course. The cheese added alot of texture and flavor and went very well with the eggplant.

This was a nice change of pace from the usual ways I make eggplant. When I first took a bite, I didn't think I liked it. After the second bite, I thought this wasn't bad at all and by the third I realized I did like this. I wish I had been able to get the eggplant a little browner though.

It's nice to see other recipes for eggplant. I didn't think it possible to do something other than fry, bread, bake and put Italian gravy and cheese on it. Wow!

Purging eggplant

Buy smaller or male (no open spot on the bottom) eggplants. Cut into slices and place on a cooling rack over the sink. Sprinkle liberally with salt and sit until it sticks. Flip and repeat letting them sit for 3 hours. Then rinse well with cool water and wring out.

i had an eggplant in my fridge and was wondering what to do with it when i saw this show. i made these the next day. my mom and dad are not big fans of eggplant, but i had them try it anyways. they loved it. dad had seconds. it is easy and you could easily change the recipe per your tastes. i added garlic. love alton, love this recipe!
