The Quintessential Soup with a Ki ck

I love this recipe! It can act as an appetizer or a meal. It has alot of zing and terrific texture. I, a novice, was able to put it together in 30 minutes and have my lunches completed for the week. Many soups are great at first, but after the first two bowls I throw the rest away. The Chorizo, Kale, and Potato soup has lasting appeal even after eating it 4 days in a row. I highly recommend it!

I LOVE this soup. I make it all the time with vegetarian chorizo and vegetable stock. The flavors are out of this world. It's really a unique combination. This is absolutely my favorite soup recipe from Rachael, and she's got some pretty good soups.

I am a big fan of Rachel Ray to begin with, so this just pushed it over the edge! This soup is such a simple way to eat healthy and mix some really unique flavors together. The chourizo and kale compliment each other quite well. My husband and especially I love to have this on a chilly night, but would welcome it any time!!

Good winter soup

User: Sarah from Tuscaloosa, AL    User Rating:
I loved the flavor combinations in this soup...I used a spicier sausage and it worked wonderfully. Don't be afraid of kale, it is a hearty green but it cooks down nicely in this soup. My only recommendation is to use more broth than is specified, but that could just be a personal preference since I like lots of broth. Enjoy!

Great recipe but... 1. 4 Servings? Come on Rachel...there's enough soup in this recipe to feed an army! Well, maybe 8. 2. I know it's hard for any amateur chef to work as efficiently as the pro's. I've made this recipe many times over the last few years and it usually takes me close to an hour.

I usually am not interested in soups that I prepare because after standing over them for 15-30 minutes, my olfactory senses are shot! Not the case with this soup. It's hearty but not heavy and smells heavenly. Thanks Rachel!

I was curious to see if I could make this soup in 30 minutes. I placed all ingredient on the counter, set the timer and off I went! I took no short cuts and it was ready in 30 mintues. The family wasn't quite ready when the soup was, so it cooked a little longer. I subed kilbasa. Very good soup! First time using kale!

One-pot winter wonder
12/05/2005 at 01:32pm
User: Auburn from Washington, DC    User Rating:
I just made this for the first time (it's December) and it was great! I added a bit more broth and, like other reviewers said, cooked it a bit longer than the 10 mins Rachael did but the flavor of the chorico/chorizo is great (and I only used 12 oz instead of 16). This with some bread is hearty enough for any big eater. I've been taking it to work and reheating for lunch and it's still great!

Highly recommend it - never heard of Chourico before, but found it easily in the grocery store - it said it was "hot" but it was not - I bought the kale pre-packaged and already diced and washed - just opened the bag and dumped it into the pot - very easy and delicious! Had to cook a little longer than Rachel said, but still came out fabulous!! Try it, your'll love it!!

Great, flexible, throw-together meal
12/03/2004 at 08:58pm
User: RUTH from Miami Beach, FL    User Rating:
Great to make when you want to use ingredients on hand without going out to the store (as long as you have the chorizo). I used frozen greens instead of fresh, cannelli (white beans) instead of chick peas and added a leek instead of all onions. Very hearty and delicious soup. Easy, quick and satisfying.

Question
12/02/2005 at 02:22pm
User: Anonymous    User Rating:
I'm curious to try this but am a little scared since I'm not familiar with chourico. Can someone tell me what's in it? It sort of looks like pepperoni, but I'm sure it's not as spicey going into soups.

Great with Collard Greens too!!!

User: CYNTHIA from Charleston, SC    User Rating:
Some of you have asked about what a good substitute for kale might be, and I've found that collards work great!!! Just cut off the thick stem, and roll the greens like a cigar, then cut in slices (like you would do to basil). Fantastic!

I have eaten or made anything like this before, but I wanted to try it. At first I wasn't sure that I liked it, but it kind of grew on me and since my husband will not eat anything "spicy or weird" I had a lot of this left over for the freezer. But like I said, It grew on me and I kept thinking about it in the freezer and I had eaten it all in a couple of weeks. I would probably make this again. Thanks Rachel for giving me something new to try.

User: JAMIE from Oakland, CA    User Rating:
I've been making this soup for a couple of years and it is always a hit! If I can't get kale, or just want a variation, I prepare the soup without it and add fresh, torn baby spinch a few minutes before serving. The end result is a brright flavor much different from the richness that the kale imparts, but equally tasty. Just don't cook the spinch for a long time as it becomes slimy. So, if I make a large batch, I add the spinach to portions as we reheat.

This is very much like the soup I make. I never added the tomatoes before but I do like the taste it gives. For those of you that are looking for something besides kale you can use cabbage cut up. I also make this with not only chourico but with linguica also. I did not add chicken broth since the chourico gives it its own flavor. Try adding beans also to this also!

I've made countless batches of soup in my life and this is one of the best I've ever made. This soup is so flavorful in such a short period of time! Spicy sausage, creamy kidney beans, toothsome potatoes and hearty kale, who'd have thunk? I added some cayenne pepper and leftover ham and sprinkled each serving with parmesan cheese. Although there are only two of us and this looked like such a huge batch, between me and my husband we ate a couple of bowls lasts night and I had a nice big bowl for breakfast this morning. It's THAT good, you can't stop eating it. xoxoxox to Rachel!

I have made this soup the traditional way my mother and grandmother have made it for generations but I must say Rachael's lighter and quicker soup is now my go to. I substitute the kale for collard greens and the chick peas for small white beans or navy beans. My mother now asks for rach's version all the time. It has become the new family tradition. Thanks Rachael

This soup is absolutely out of this world! Rachael Ray has really been on a roll lately. The chickpeas soak up all of the red pepper and seasonings from the chourico. The kale is an excellent addition. I always add or take a little something away from the recipe but you don't want to touch this one. I can't say enough about this soup. It's hearty and has such depth of flavor. I never would of thought to use chourico like this. The combination of flavors and textures is happiness in the mouth! YUM-O!!!

Even my 2 year old scarfed this down. If you use a well-seasoned sausage there is no need for anything besides salt and pepper to season it. I have had a hard time finding precooked chorizo, so I have on occasion used garlic and cayenne seasoned sausage. A great, quick, kid pleasing soup (use a less spicy sausage to make child-friendly).

First time I made this, I mistakenly used Mexican chorizo instead of Spanish chorizo. Soup was okay,(very, very spicy) but I wasn't bowled over. After discovering I'd used wrong chorizo I made again and LOVED IT...just a note of caution to those unfamiliar with difference between two chorizos...use the SPANISH!

For a soup I enjoy making this one when it gets cold and even when it gets hot. Just by looking at I know it is healthy. So much flavor and so good.

I have made this soup many times and here I am once again wanting to make this soup and for a crowd. I have lost my recipe and had to print off another copy. The only thing I had a hard time finding was the chourico so I have sub some kelbasa, but I use the chourico when I can find it. Great flavors and very filling, great feel good food.

"It's alright"

I made this soup for my husband and children lastnight and "it's alright" was everyones reponse. The kale was just too much, but the rest of the soup minus that would have been really good, maybe even half of the kale that it calls for would have made it a better soup. I know Rachael calls it a 30 minute meal but it was more like an hour or more meal. It looked good, it smelled good, but the time it took to make it and the end result just weren't worth it.

Wonderful!

30 minutes is right

This recipe is great! It took exactly 30 minutes to make and it turned out fantastic. It has a great taste and texture and the kale is a fantastic part of the soup. A couple of tips - be sure to cut your kale into edible sizes and it takes a bit longer than 2 minutes to wilt, but other than that, it's a winner.

Delicious!

I couldn't wait to make this soup after seeing Rachael make it on t.v. I couldn't find smoked chorizo. I could only find Mexican-style, uncooked chorizo. So, I cooked the chorizo and then let it cool before removing it from the casing. I shared this with my mom and grandma and we all loved it! It had a little bit of a kick from the chorizo. I did cook it for longer than the recipe said. After I had all the ingredients in the pot, I simmered it over low heat for almost 30 minutes. I will definitely make this again! It's very similar to one my mom makes with sausage and cabbage. Delicious!

Linguica Alternative

The soup was outstanding. The chourico at my market was soft and mushy; more useful in a cassorole. I substituted Linguica, a traditional Portuguese sausage, with very good results.

Satisfying and Tastey

I made this soup when I came across it in Rachel's "Comfort Foods" cookbook. In the book, she also suggests using andouille sausage as opposed to the chourizo, which I did. Excellent!! I've made it a couple of times and find that there isn't enough liquid to actually give it a soup consistency. The first time I added more chicken broth but I felt it made the soup too strong, so the second time I added water and it was just right. I also sprinkle a little grated parmesean over the top at serving time. Yum!!!

This soup was great. Altough, we used beef brats instead of chourico because we didn't have any in the house. The flavors in this soup regardless of the meat used is very good.

Rachael, once again you have given me a keeper recipe. I made this for my guys, and they could not get enough. The kale is wonderful in this and all the flavors blended perfectly. I am not an adventurous cook but am having a wondrous time trying all the new recipes I see on your show and a couple of others. Keep up the good work!

Make sure you get pre-cooked Chourico. I had to cook the kind I bought and it was like "ground beef cooked" not chunks. It was very god, my husband loved it.

My husband called me on the phone to tell me that this was the best soup that he has ever had...thank you RR! I brought the soup to work and the Mc Crowd was so jealous!!!! I did sub soy chorizo for the real deal to save fat and calories (I live in Los Angeles where it is very important to be shapely) and the soup still smelled and tasted insane.

This recipe is one of the best potato soup offerings I have been introduced to. I reminds me of a soup that my wife's Italian grandmother made with Italian sausage in place of the Chourico.

Perfect for a winter afternoon. It was surprisingly quick to make, but if you leave it for a while longer, the flavours have more time to combine and deepen. I substituted Italian sausage for the chourico, as I just couldn't find any of the latter. This soup made great leftovers!

I love this soup. I had never cooked with Kale before. I use the turkey kilbasa instead of Chorizo and I use a large can of the "Muir" diced tomatoes. It is so hearty and my husband and I just can't eat it fast enough.
